Slow Cooker Roast Beef

I have made this recipe several times now and enjoyed it every time. I don't find that it's too salty because I use low sodium soy sauce. As others have mentioned, mine usually cooks for about 8 hours and it's done, but I do check the temperature to make sure. This one is a favorite in my house!

Slow Cooker Carolina BBQ

Wow, this turned out awesome. I don't live in NC but have family who live there, and when I was younger we always had NC bbq when we visited. It was always a highlight of the trip. So now that I can make it, it brings back all those great memories. Delicious, and so close to the authentic bbq it's amazing. I made an 8 lb roast but followed the rest as described. The only thing I probably will change next time is to ease up on one of the spices, perhaps the cayenne. But that's just personal preference. It was so close to the real thing, I'm still amazed. Everyone else raved about it too. Thank you so much!

Easy Marinated Mushrooms

When I saw this recipe my eyes popped at all the sugar but I had to try it. It was incredibly rich but it was worth trying! I love mushrooms and this was delicious!

Kalua Pig in a Slow Cooker

Just tried this recipe for a party and it was a huge hit. I used authentic Hawaiian sea salt and hickory flavored Liquid Smoke on a 7 lb pork shoulder roast in the slow cooker for 20 hours, turning over half way as described. It was totally falling off the bone when it was done... awesome! I also put it on a bed of white rice, and it needed no seasoning of any kind. It practically melted in our mouths. Will definitely keep this as a favorite! PS... also served Creamy Green Beans Parmesan from this site. Went very well together!

Slow Cooker Taco Soup

Wow, this is delicious! I had to omit the onion, bell pepper and black olives due to family preferences, so I made up for it by adding an extra pound of beef, and I used tomato sauce instead of juice... the remaining combination was outstanding. We added shredded cheese and sour cream to taste, and it made a wonderful soup/chili. And it was so easy! This is definitely a winner in our family!

Pasta with Peas and Sausage

Well my husband and I really loved this dish. I made it as described except for the clove of garlic (didn't have any). Can't convince the little one to enjoy the peas yet, but I gave it 5 stars because the adults will definitely eat it again lol.

Flatlander Chili

This chili is awesome. I will admit I didn't do it quite as described but it was so good I have to give the original 5 stars. I used 3 pounds lean ground beef, a large can of tomato sauce, a large can of Rotel, no onions/celery/peppers, and I used a can each of black beans, dark red kidney beans, and pinto beans. Also browned the meat and then threw it all in the slow cooker on low for 6 hours. It was so good I've made it twice in two weeks and each time my guests raved about it. It's perfect with or without small Frito chips, shredded cheddar cheese and even sour cream. Love it!

Slow Cooker Creamed Corn

This is an awesome side dish. While the oven is busy cooking a roast, the slow cooker can be making this corn. We loved it. I made a double batch, and it fed 6 people perfectly. The only thing I will change for future batches is to halve the butter. For us, half a cup butter was even too much for the double batch. Otherwise, delish!

Aunt Carol's Spinach and Fish Bake

I made this one as described and my dish came out uncooked. So I came back and read some reviews that also said their fish came out cold, and did what they suggested - I increased the temperature to 400 degrees and cooked it longer. Mine ended up taking an hour! Very disappointed.

Saucy Apple Pork Chops

My family thought this was very good. Just as the original poster said, it was a great way to use up some applesauce I had lying around, and it smelled great while it was cooking. Made this as described except double the sauce and cooked the pork in part of it and poured the rest of the sauce on the pork pieces to bake. Very yummy!

Crispy Herb Baked Chicken

This is by far the best chicken I've ever made. I used chicken breast tenderloins because I have not had much luck with chicken breasts (they are so thick, have to cook them for so long to bring them to a safe temperature and they dry out... maybe it's my oven). The tenderloins were thinner and turned out perfectly! I used the potato flakes, parmesan cheese, garlic pepper (instead of salt) and paprika. I will definitely be making this again!

Fabulous Wet Burritos

As a lover of Tex-Mex food, I can honestly say this is delicious. I can understand how others might think it was bland or something because there's not a lot of spices/flavors added. But on taste alone, with the mixture of beef, refried beans, and the yummy sauce that makes it "wet" - well this one is a winner. We gobbled it up and were stuffed afterward. Even my 9 year old literally licked her plate clean (good thing we were at home lol). 5 stars in my book!

Tilapia Soft Tacos with Chipotle Cream

This was a fun recipe! I didn't tell hubby what I was making, so when I brought them out, he said "what is this?" And I said "fish tacos" And he goes "Hmm, that sounds strange, I don't know about this." But he tried it and ended up eating 3! I made the fish as written but used a simple mayo/dijon mustard blend for the sauce, since we can't have anything too spicy. Also added a little grated parmesan cheese (we love cheese). The cilantro really made the fish taste great, and the lettuce greens provided a nice crunch. We'll definitely have this again!

Taco Casserole

Delicious! I love casseroles (who doesn't? lol) I changed this ever so slightly to suit our tastes (left out the onions and used medium chunky salsa instead of diced tomatoes). Turned out delicious! For serving, I drizzled taco sauce along with sour cream. Yum yum yum!

Sweet N Sour Beans

Took this dish to a party and there was about one bowl's worth left... everyone loved it. I try not to alter the recipes I use from this site, but this one I did need to just for personal taste - not much though! I left out the onions and doubled the bacon (we love bacon!), and I also switched out the lima beans and used green beans instead. Then all I did was dump it all in the crockpot and cook on low for 3 hours and on high the 4th hour. Turned out delicious and even the kids ate it up. We could all taste the sweet and the sour - it was just the right blend. Thanks for such a yummy recipe, this is a keeper!

Honey-Orange Marinated Salmon

Well this was a definite hit with my family. We love salmon and I've had fun trying the different recipes here. This one was easy and yummy. I marinated the filets for 1.5 hours on each side and then continued as described (oh I did leave out the ginger - just don't have any). I also made an extra batch of sauce on the side and heated it on the stove (we love sauces). Went great on a bed of rice. This is a keeper!

Corn and Black Bean Salad

We really enjoyed this dish as a side for grilled burgers/hot dogs. It had a nice spice and flavor to it and smelled great! What a nice change to the usual potato salad. The leftovers tasted just as good the next day. Will definitely make this again!
