Quinoa Tuna Casserole

Like others have said, this is a great basic and versatile casserole recipe. I was easily able to make substitutions for items I didn't have. I was out of quinoa, butter and mushrooms, so I omitted the butter, used frozen mixed veggies instead of mushrooms, cooked egg noodles (instead of quinoa) in the broth, and mixed half of the remaining broth, after the noodles were cooked, back into the mixture and allowed to thicken. Sprinkled grated cheddar cheese on top.

Fluffy Pancakes

We used all whole wheat flour instead of all-purpose and they still turned out fluffy! To sneak veggies into our young picky eater, we add 1 cup of grated carrot and apple or beets - you'd never know they were there.

Butternut Squash and Turkey Chili

This was great! So good, the company loved it, and my 2 picky toddlers loved it. I can't handle hot or even medium hot taste, so I reduced the chilli powder by 1/3 the amount and reduced the chopped green chilies by 1/2. It was very mild, I'll use the whole amount of chopped green chilies next time. I also could not purchase canned hominy, so I substituted the same amount of frozen yellow corn in its place. Served it with a side of nachos for scooping, sprinkled with low-fat shredded cheddar cheese and non-fat plain greek style yogurt. Loved it! Will make again.

Juicy Roasted Chicken

This really is a great recipe - a simple one dish meal with delicious results! The only changes I made were: I used butter instead of margarine and halved the amount to reduce fat content. Didn't have onion powder so I used poultry seasoning instead. Added 1/4 sweet onion to the celery in the cavity. Chopped up an additional stalk of celery, 1/4 sweet onion, potatoes, carrots, broccoli and added 1/4 cup water to the roasting pan for a full one-dish meal. I will make this again and recommend it!

Balsamic Marinated Chicken Breasts

So good! Our toddlers even loved it. I will make this again, very flavourful. I used mostly fresh instead of the dried ingredients. My oven obviously cooks faster, so next time I will reduce the oven temperature and/or cooking time, as they were overdone.

Yogurt and Cereal coated baked chicken breasts

The coating is so tasty and crispy, I don't miss the skin at all! Also, the chicken is very moist, cooked at just the right temperature for just the right amount of time. An awesome healthy alternative to breaded or skin-left-on chicken.

Soy Sauce Substitute

It's great to have an easy to make substitute on hand & I'm sure this is much healthier than soya sauce as it would have a lot less sodium. I definitely prefer the flavour of the real thing, but this will do the trick. Thank you for sharing!

Slow Cooker Bolognese

The flavour and consistency was incredible! Excellent recipe. I didn't have canned crushed tomatoes, so I quickly searched online and made a substitute with fresh tomatoes. I will absolutely make this again & recommend to others. Thank you for sharing!

Keema (Indian-Style Ground Meat)

I really like this dish! I did less than half of my garam masala substitute and it was still spicy, so do add a little at a time while tasting as you go to ensure you don't over do it! A great inspiration recipe that you can add to if you desire, which is what I did. I took the author's advice and added veggies: frozen mix of peas, carrots, corn & green beans, sweet potatoes, celery & cauliflower serving it with buckwheat instead of rice. I substituted and added other ingredients according to what I didn't have, etc: ground beef instead of lamb, 1/2 packet of onion soup mix instead of onion, 1.5 tsp Chana Dal masala instead of 2 Tbsp garam masala & added 1.5 Tbsp yellow curry (I cannot handle hot spice, hence the decrease), 1/4 tsp sea salt (reduced salt due to type & using onion soup mix), increased tomato paste to 5.5 fl oz can adding 1/2 cup water and 1/2 cup whole milk (due to increased volume of dish b/c of added veggies, & to help reduce spiciness).

Serbian Ground Beef, Veggie, and Potato Bake

This was great! I followed the advise of a reviewer who mentioned layering the dish with a potato layer in the middle. I did two things differently: 1 large sweet potato in place of the 2 potatoes (b/c it's what we had on hand), and sprinkled the top with crumbled feta cheese. My husband loved it and he had spent some time in Turkey - loves eastern european cuisine! The idea of this dish reminds me of a Turkish layered vegetable bake that I have made for him.

Oven Roasted Potatoes

Turned out a bit dry for me and a tad too spicy. Will add some water & lemon, and reduce the red pepper flakes by half next time. Great base recipe to tweak with according to your liking!

Chocolate Chip Cookies (Gluten Free)

These are SO good, soft & moist. Cannot tell the difference between these & cookies made with all-purpose refined wheat flour. I am not sensitive to gluten or eggs, I just like trying other grains & avoiding wheat. I used kamut flour (apparently has gluten) and 1 egg in place of the egg-substitute. We love the results. Thank you for a great wheat alternative cookie recipe!

Peachy Keen Smoothie

This is a great base recipe for a smoothie when you don't have yogurt! I didn't have peaches, but I had frozen tropical fruit that I used instead, so I omitted the ice cubes. I also didn't have any rolled oats, so I omitted that, too. And I used skim milk instead of the vanilla soy milk. It was great!

Thai Curry Tofu

Great flavour! My family loved this dish (my picky 2 yr old included!). Simple & quick to make - I was able to use what I already had in the house. Changes I made were adding a large handful of chopped baby spinach just before adding the coconut milk, reducing sodium content by using 1/4 tsp sea salt instead of 1/2 tsp regular table salt, and substituted 1 Tbsp dried parsley flakes for the fresh cilantro because I didn't have it. Next time I'd like to try this with the fresh cilantro and reduce the high fat & calorie content by using 1-1/2 tsp Extra Virgin Olive oil instead of butter and Light Coconut Milk. I served this over a Kashmiri rice inspired side dish made of what I had in the house (leftover trail mix of nuts, dried fruit and coconut shavings; 1 vegetable bouillon cube; 1 Tbsp dried chives; and 1 tsp olive oil - all added to boiling water when adding the brown rice). Make sure to use a low sodium bouillon cube and unsalted trail mix, or omit the salt from the Thai Curry Tofu recipe. I didn't do either and the combination of the 2 dishes was too salty.

Spaghetti Squash I

This is an excellent dish! Fast, easy and delicious. Even though I didn't have all of the exact ingredients on hand, I still loved it - it's a great idea and you can change it up so easily, just like the author said. I didn't have feta, olives or fresh basil, so I used grated swiss, chopped green pepper (added it just after the garlic), and 1 Tbsp of dried basil. I will make this again and will try it with the ingredients it calls for.

Mushroom Pork Tenderloin

This was great! I added some asparagus and cherry tomatoes as a side to complete the meal. I had to simmer the pork a little longer, probably because I didn't have the stove turned up high enough when simmering. I used a suggestion from one of the reviews and added 1/4 red onion (chopped) and 1 chopped orange bell pepper to the veggies. I'll make this again, for sure!

Game Day Hamburgers

I followed what other reviews suggested and added one egg, some bread crumbs, ketchup, steak seasoning and only one of the onion soup mix packets to the meat. Also, I fried the shredded potatoes and chopped mushrooms with one clove of crushed garlic for 5 minutes prior to stuffing the patties to make sure the potatoes would cook all the way through. I had lots of compliments on these! I will make them again:)

Sharon's Scrumptious Souvlaki

I LOVE this recipe! Very simple to make and very flavorful; however, I've always made it with chicken, not lamb (due to cost). Other than that, I follow the recipe exactly. I'd like to try using fresh mint instead of dried. The homemade tzatziki sauce is delicious - tastes very authentic. I have made this again and again - a family favorite. I serve it with Greek style potatoes and the "Greek Salad III" recipe.

Greek Salad III

I've been making this salad for a couple of years and have passed it on to many others who love it! I LOVE the dressing recipe and wouldn't change a thing to that part. The only changes I make are: using half a red onion, omitting the olives (husband dislikes them), and using regular reduced fat feta cheese. Sometimes, just for something different (looks great and serves more guests), I add half a head of red cabbage, chopped, and then double the dressing recipe - it's a huge hit.

Slow Cooker Pork Tenderloin with Beer and Veggies

As the author stated, this is a great base recipe to tailor to your liking! I slightly increased the amount of veggies and added 1 chopped celery stalk celery, 1 quartered red apple, and for herbs I added 1 tsp dried thyme, 1 tsp dried rosemary, 2 bay leaves and 1 Tbsp dried parsley (fresh herbs would have been better). For the beer, I increased the amount to 8 fl oz and used Rickard's Red (I'd prefer to use Rickard's Dark, but we were out). I cooked it on high for 4 hrs instead of on low. Extremely flavorful, tender, and convenient. My family and I loved it and will make it again. I highly recommend this recipe and encourage tailoring it by adding herbs/spices you like that compliment pork.
