My favorite things to cook
I love cooking vegetables. They are so beautiful and their capability for transformation is delightful. One of my favorite memories was when I was cooking at the Catholic Worker and someone donated some really scary looking carrots (they were covered in mud and looked like frightening claws, what a contrast to the unsoiled, perfectly straight rods that I have become accustomed to in the grocery store!) By the time those frightening carrots were cleaned, peeled and chopped - they were astonishingly gorgeous. I don't think those grocery store carrots could ever produce such brilliant coins of deep orange.
My favorite family cooking traditions
Getting a Pappa Murphy's pizza on Saturday nights and eating it with a nice glass of red wine and chillin'.
My cooking triumphs
I used to volunteer at the Catholic Worker House preparing meals for the guests. The friend I worked with suggested we make a soup which contained spices that the guests do not normally appreciate such as turmeric. She lamented that, despite all of our work, the guests were not going to appreciate the food that we prepared for them (their palates lean towards McDonald's). I said, "if it tastes good, they will eat it!" I tweaked and tweaked that soup until my taste buds were finally pleased with it's balance, complexity and completeness. And what do you know, the guests scarfed it down in record time and were asking for the recipe!
My cooking tragedies
I was having a mom's group over and I wanted to use the opportunity to experiment with make-ahead breakfast casseroles. I chose some recipes that used stuffing cubes and quickly skimmed through the reviews for any recommended alterations. The reviews recommended adding additional stuffing mix - which I did. I ended up serving my poor guests stuffing for breakfast. And I did so after telling them that food is my love language! Ah well:)

Hot and Spicy Himalayan Tea (Chai Tea)
This recipe is PERFECT. It tastes like the best chai you've ever had. I substituted honey for the brown sugar cause that was all I had and drank it with monkey bread. Unfortunately I did this right before I went to bed so then I stayed awake really late but that was my own fault and frankly - it was worth it!

Easy Indian-Style Chicken
Husband loved this. Made it in the crockpot. Started by sautéing the onions and seeds in a skillet, threw everything else in the crockpot. Chicken breasts were frozen. Cooked it till chicken fell apart then adjusted the seasonings at the end. Put in about three times seasoning and also added the whole can of coconut milk. Sautéed veggies in coconut oil. Added a 14 oz can tomato sauce and water until it was a consistency that I liked. Served over basmati rice with cumin seeds and green peas.

Hamburger Soup I
MMMMMMMMM!!!!!!! Like so many others, I changed it in order to use what I had on hand. I started by browning a lb. of ground beef, drained that, then added 2 cubed potatoes (peeled russetts), one onion (yellow) and a couple of carrots that I peeled and thinly sliced. Threw those veggies in there and cooked them till they were beginning to become soft. Then I added the kernels from 4 cobs of corn (fresh). I added water until it about covered all the veggies and meat and then added about 3 TB ketchup and 2 tsp basil along with half a small container (6 oz.?) tomato paste, 1 TB kosher salt, 1 and 1/2 tsp. celery seed and probably like 8 beef bouillon cubes. As this was coming to a boil, I added about 4 cloves of garlic thinly sliced and probably like 12 fresh roma tomatoes diced (not peeled or seeded). I let it cook till the flavors married and now I am going to go eat my second bowl.
