Slow-Cooker Chicken Tortilla Soup

Good recipe. Live in Southern California and have spent tons of time in Mexico and I thought this had a very authentic taste, especially considering how easy it was. I made some changes based on what I had a available and our taste. I used a hot enchilada sauce and also added some hot sauce. We like spicy and this had some serious kick! I skipped the water and added more broth. I made this on the stove top. I added raw chicken breast to my broth and let it simmer on really low for a while, pulled it out and shredded it and then added it back in. We topped it with a little queso fresco, lime, cilantro, avocado and greek yogurt (in lieu of sour cream).

Eggplant Parmesan II

Wow! I consider myself a pretty good cook, and I have made some yummy dinners using this site for recipes, but this one was AWESOME! I was cooking for two, so just used one large eggplant and adjusted the other ingredients as I went (I'm not very good at following recipes...probably why I am a pretty awful baker!) I used a garlic marinara and a italian herb flavored panko. I'm not sure if the recipe mentioned this, but I sprayed them with an olive oil cooking spray before popping them in the oven, and I think that helped them crisp up a bit. Great recipe that I think would please even picky, anti-veggie people. Definitely worth trying!

Grilled Bacon Jalapeno Wraps

Good basic recipe. I boil the peppers for a couple minutes to make them slightly less spicy. I also do half cream cheese, half shredded cheddar. My husband isn't a huge cream cheese fan so I swap half of it...it makes the filling taste like cheddar but still have a creamy texture. After I form the poppers I put them in the freezer for about 20 minutes. I find that freezing them helps the bacon crisp up without the filling melting out too quickly!

White Bean Chicken Chili

One of our favorites, we eat it all the time in the fall and winter. To make it easier, I throw everything (except the corn and beans) into the crock pot. I use a jar of a chunky salsa verde. When I get home (about an hour before we eat) I add a can of white beans and corn (sometimes canned, sometimes I will grill a couple ears and then add) and will add more spices if needed. Love how easy it is, and that it is a healthy comfort meal that can be made in the crock pot. I top mine with some cheddar jack cheese, avocado, and a dollop of plain greek yogurt instead of sour cream.

Grilled Buffalo Wings

I don't keep soda at home, so improvised and used a sweet molasses type BBQ sauce. Just used a little and it gave a nice slight sweetness for us, we're not huge fans of too much sweet. I will try it with cola sometime. Because I changed the ingredients, my rating is based mostly on the cooking technique, which I think kept the wings flavorful and moist! You do have to tend to the chicken so might not be great for a quick weeknight meal. Great for the weekends though, just grab a beer and turn on some good music and they are done before you know it!
