Lemonade Pie III

Reviewed: Aug. 17, 2010
VERY SWEET but excellent and SUPER EASY! Doubling the wet ingredients makes three pies (so buy three pie shells)--plenty for gifting! :D Oh, and I used Raspberry Lemonade and Pineapple juice (for one of each and one half/half pie). The Raspberry Lemonade was phenomenal! Can't wait to experiment with other flavors. Will definitely make again... and again!

Breakfast Pizza I

Reviewed: Dec. 29, 2008
AWESOME! Everyone enjoyed this on Xmas morning! I took a few tips from the reviews, using a 9x13 pan and adding 1/2 cup crumbled bacon. I will definitely make this again (and will probably hold out a bit of the sausage and add some green onion and mushrooms). This is a the perfect recipe for company!

Tater Tot Hot Dish II

Reviewed: Dec. 11, 2008
I tried this mostly out of curiosity because I had heard it referenced on that "13 and Pregnant Again" show, thinking of the recipe as an oddity, much like the family from the show. Well, turns out it was a super crowd-pleaser (especially with the short ones), so I suppose I will make it again--just not soon since it's so fattening. As other reviewers suggested, I cooked the tots first, added a bit of garlic powder to the beef, and added about a cup of cheese over the tots before layering the soup. OH! and if I had it to do over again I would have held the fried onions out until 15 minutes before it was done. I had to foil them to keep them from burning. Overall, good comfort food. Will make again!

Pronto Beef and Rice

Reviewed: Feb. 26, 2008
this was filling, but was definitely missing something. don't know if it needed cheese or Rotels or Tony's but it needed more flavor for sure. might try it again.

Throw Together Mexican Casserole

Reviewed: Apr. 11, 2007
No offense, because I'm sure this will fly as "Mexican" fare in the northern states, but the best thing this Texan can say about it is that it was edible. I was reeled in by the "throw together" concept but should have run away when I read egg noodles was an ingredient. This dish was very bland and unexciting. Thanks anyway.

Baked Ziti I

Reviewed: Apr. 11, 2007
Excellent and SOOOOOO easy!!! I am so glad I found this recipe! Whenever I cook beef I always add diced bell pepper and onion and season with garlic powder and Lawry's season salt--it adds so much flavor. And the second time I cooked this I put a little sauce (about a 1/4 of one jar) on the bottom of the pan before layering the pasta because the impenetrable layer of provalone kind of left the ziti on the bottom naked the first time I cooked this. It wasn't a real problem though since it mixed up nicely and tasted so great. I've cooked this for friends and been asked for the recipe. I've made it three times in one month! It's a definite winner! =)

I've never given a bad review before but these were really disappointing. They were quite bland and fell apart. :(

The Best Chicken Salad Ever

Reviewed: Mar. 2, 2004
Very good. I made this at the last minute for a party and goofed up and put *WAY* too much onion, but it was very good nonetheless. I've never liked chunky chicken salad so this is the answer for me. Looking forward to making it again! 5 stars.

Better Than Sex Cake I

Reviewed: Oct. 13, 2003
OMG, this recipe was *SOOOOOOOO* good!!! Days after the cake had gone, the memory of it lingered. I would turn to my husband and say, "You know what I miss?" He'd reply, "What?" To which I'd answer, "THE CAKE!" You see, mine is the sweet-tooth and his is salty, but even he gave it a 4.5 STAR rating. That is high praise! This cake was so exceptionally good that I'm going to have to force myself to wait a while before making it again. I give it FIVE STARS and a big glass of milk! ;)

Cheesy Chicken

Reviewed: Oct. 1, 2003
Quite good! I altered the recipe a bit, using Cream of Mushroom soup, increased the cheese and added some green chilis. It took the chicken about an hour to cook at such a low temperature that the cheese went from the gooey to cooked stage, which was a bit disappointing. Next time I think I will boil and shred the chicken and layer it with the croutons on the bottom so they get soft instead of browning. But it was a good flavor combo and very easy. Four stars!

Mom's Carne Guisada

Reviewed: Jul. 7, 2003
Excellent! Tasted like authentic carne guisada that I've had in Mexican restaurants. Better than some, even. Used a *TON* more cumin and good deal more garlic. Had a little trouble browning the flour for the gravy, but it came out really well nonetheless. Now we make the gravy separately and it works better. Can't wait to make it again! FIVE STARS!!!

Chocolate Cinnamon Chewies

Reviewed: Jun. 25, 2003
OMG, these are so delicious!!! I have made them three times in as many weeks! Be careful, the dough is so thick that I have almost burnt up my mixer. And I had to adjust the cooking time to 13 to 15 minutes. But give these a try... you won't be disappointed!

Burrito Pie

Reviewed: Jan. 8, 2003
Pretty darn good. The "this one is hot!" warning gave us a laugh; it's not anywhere near hot to a Texan. So we spiced it up a bit, added taco seasoning to the ground meat before the sauces, added the whole cans of chilis and olives and put in some Chipotle tobasco to boot. Still came out a little on the bland side. Will try the "hot" taco sauce next time. The sour cream is a must! But it was quite good and worth making again. Four stars.

Beth's Scalloped Cabbage

Reviewed: Jan. 2, 2003
Truly excellent! Neither my hubby nor I like cabbage but felt the need to choke some down on New Year's Day, and I'm so glad I found this recipe. Heck, I may even make it some other time! I read a previous review that stated they wished they'd doubled the cheese sauce recipe so I made 1.5 x the amount and it was just great. Should have drained the cabbage better, but I didn't know any better. This is a FIVE STAR recipe. It received rave reviews in my house. HIGHLY RECOMMEND!

Beef and Mushroom Stuffed Peppers

This was really good. I added a bit more seasoning: white pepper, onion salt and a touch of red pepper to give it a kick. Excellent. I will make it again.

Brigadeiro

Reviewed: Jul. 2, 2002
Pretty good. Mine turned out well. I kept the heat on medium-low and STIRRED CONSTANTLY. When it got nice and thick I put it in a buttered bowl and set it aside for about an hour. It balled up nicely and I dredged the balls in confectioner's sugar. They were good at room temperature but I liked them more chilled. I plan to try it again and add toasted coconut and a little vanilla. Heck, it's three ingredients--give it a try! Four stars.
