Easy Vegetable Pot Pie

"That was better than what you could get at Cracker Barrel!" My changes- based on "on hand" ingredients- Substituted a bag of frozen mixed vegetables and about 1 cup of frozen diced potatoes instead of canned. Sauteed 1/2 chopped onion in butter, and 1 small chicken breast. Then added cream of chicken soup instead of potato, defrosted veggies, about 2/3 cup of leftover gravy from the other night plus the milk to saute pan. Added fresh chopped garden oregano, parsley and basil. Recipe took about 20 min max to prep. 5 min to eat! YUM!

Mango Chicken Piccata

Was ok, the ingredient proportions were inappropriate and wasteful. I adjusted to 4 servings and wasted 2 cups of mango nectar to dip 4 breasts, then threw nearly all of it away. All the ingredients were just too much. And it didn't recommend draining the oil after cooking the chicken ( which i should have known better to just do, but i didn't)- so the sauce was too heavy/greasy for my taste. Great idea for a recipe- but cooking again I would alter it considerably.

Homemade Hashbrowns

Kids and I loved these. Here's my minor changes- Saute onions in olive oil and tad butter first, add 1/4 cup flour to onions when lightly browned. Add onion mix to egg/potato. Drop onto already heated pan with little oil in it. Flatten to no more than 1/2 inch patties. Cook medium heat for abt. 10 min/side. Don't touch them while cooking. I also added a little shredded white cheddar to cooked side after flipping. Worth the wait!!!
