Carol's Chicken Chili

Definitely needed to spice this up a bit. I actually like things a little on the tame side and after the first bowl, I added more cumin and garlic, salt and pepper. Leftovers the day after had a nice flavor. Quick and easy, I will probably make this again, but will experiment with my own add-ins and spices.

Oatmeal Peanut Butter Bars

Delicious! I used chopped peanuts instead of sunflower seeds. Very easy to make. Next time I might cut back on the brown sugar and chocolate chips a bit as the bars were a little on the sweet side for me. It should be fun to experiment with different ingredients.

Angel's Old Fashioned Beef Stew

Like many of the reviewers here, I followed OLIVERCADO's reccomendations (sort by most useful to see his review) and made some adjustments of my own to create this delicious stew. These are the changes I made: 1) From Olivercado: I increased the salt to 3 tsps, and reduced the pepper to 1/2 tsp. I added thyme and sage, but I used 1 tsp each of dried herbs instead of fresh (I omitted the Rosemary). I added 2 bay leaves, 2 TBS worchestershire sauce, and a can of tomatoes, although the ones I had on hand were diced and seasoned with garlic instead of crushed. 2) I cut up a cross rib roast for this dish and so I had about 2.5 lbs instead of 2. 3) I cooked this in the crock pot, having browned the meat and onion first. I cooked on high for 2 hours then reduced the heat to low for about 4 more hours. 4) Because I was using a slow cooker, I reduced the liquid. I added only a cup of beef broth, and a cup of chablis blanc. I usually use red wines or burgandy in beef dishes, but the chablis turned out well giving the finished stew a rich mellow flavor. 5) I used about 5 medium potatoes instead of 6 large. I used a whole chopped yellow onion instead of 12 boiling onions, I used 1/2 lb of prepared (bagged) baby carrots. The stew was rich and flavorful and the consistency just right--no need to thicken. I will definitely make this again although I will probably increase the dried spices to 1 1/2-2 tsps. each and add some green beans. Yum.

Awesome Slow Cooker Pot Roast

I have made this several times now both in the oven and the crockpot--I love it! So easy and so tasty. However it can be a little on the salty side. I'll have to remember NOT to salt the roast before cooking (not that its in the recipe, but that's been my habit) and perhaps try some low-sodium version of the cream of mushroom soups.

Honey Comb Coffee Cake

I made this for a Christmas day brunch and it went over very well. The cake was very moist and rich. The almond and orange is a nice change from traditional cinnamon coffee cakes and it bakes up beautifully. I will make this again.

Creamy Au Gratin Potatoes

I've made this a couple of times now and it was a hit at Easter dinner. I chop the onion finely instead of slicing it to make it more kid friendly and I grated another cup of cheese to top the dish. The first time I made it I used up all the bits of cheese in my refridgerator so it had swiss and jack as well cheddar. Either way it was delicious.

Sam's Famous Carrot Cake

This cake got rave reviews at a birthday party. One guest who normally buys her child's cakes at a bakery has resolved to bake this instead. Mine turned out very moist. I checked it at after 50 minutes and found it cooked thouroughly. I left out the raisins and iced it with cream cheese frosting. Next time I will increase the carrots and maybe add some nutmeg. I used a 10x13 pan and was glad I did as I don't think the batter would have fit in the recommended pan.

Banana Cake VI

Be sure and serve this cake at room temperature. I very nearly gave this recipe a bad review because right out of the refrigerator the texture was rubbery but at room temperature it was moist and delicious. I frosted the cake with chocolate cream cheese frosting (also from this site) for a change and it was very good.

Carrot Bread I

I took someones suggestion and added vanilla. Very tasty recipe. I made muffins instead of a bread and froze the extras. This recipe freezes very well. I will make this again.

Peachy Pork Chops

Maybe I just have too many delicious recipes for porkchops but I was not overly impressed with this recipe. Nevertheless, it was easy to make and worth trying. It had a nice flavor, but I will probably not be adding this to my recipe box.

Potato Tacos

These were easy and tasty! However, next time I will add some salt and pepper to the potato mixture. And while part of me would like to lighten these up by using low-fat cheese an alternative cooking method for the tortillas, another part of me is already thinking about how really excellent crumbled up bacon would be when added to the potato mixture. I will definitely be making/experimenting with these again.

Best Brownies

Although I like honey, I didn't care for it in the frosting portion of this recipe. Other than that, this a fine basic recipe, but I have others I like better. These are not bad, I like a thicker, chewier brownie.
