Fresh Coconut Cake

Very good!! I cut the recipe in 1/3 and still came out with a very good 2 layer cake. Added a little more sugar, and substituted the coconut-water instead of plain old water. Had a bit of trouble too, like the review above, with the icing, but all in all, it still came out yummy. Here's a hint on how to use fresh coconut, (I had to do a bit of research!) Crack coconut open, carefully, you can do this with a screwdriver and a hammer into one of the "eyes", and pour out & save the coconut water. Once you have the coconut in large pieces, (halves more or less) put them on a cookie sheet in an oven heated to 250^ for 10-15 minutes. This will make the meat loosen up a bit from the shell and easier to get out. You'll still probably have to pry. Then there is another layer of brown skin you'll have to slice off with a paring knife before you throw the meat into the food processor. :) It's a little bit of work, but definitely worth it in the end.

Grilled Zucchini and Squash

I use olive oil instead of butter since we're on a non-dairy diet. Also, any seasons can be substituted for the ones in the recipe. I enjoy some garlic powder, salt, pepper, and some rosemary. :)

Italian Bread Using a Bread Machine

The absolute BEST bread I've ever made. FORGET store bought loaves... this is soo easy and comes out melt-in-your-mouth PERFECT... I made recipe exactly as is... nothing else needed, nothing else subtracted. AWESOME, AWESOME, AWESOME! :D :D :D

Cranberry Pork Chops II

Yummy!!! I didn't have fresh cranberries, so used a can of whole cranberry sauce with only 1/2 cup sugar. I also added 1/2 a chopped onion for some additional flavor. I did not need to add any water as the recipe stated as the chops made their own liquid. As a matter of fact, I had to add a bit of flour to thicken the sauce into a gravy consistency. This was delicious!

Chicken Chili

Great!! I left out the cocoa and used diced tomatoes instead of the whole... added an additional can of them, as it seemed a bit dry without. I also used canned mushrooms as I had them on hand instead of the fresh. Good recipe!!

Oven Meatballs

Yummy!! I was tempted to add some onions or bread crumbs or something to the meat as I was mixing it up into balls, but in the interest of keeping some semblence of this recipe, I refrained. :) Per other reviews, I only used 1/4 cup sugar. I left out the soy sauce and mustard powder, and instead added 1/4 cup BBQ sauce along with 1/4 cup ketchup. I also used red wine vinegar. This was really good! :) I will be keeping this recipe!

Slow Cooker Turkey Breast

Yummy! Instead of the onion soup mix, I rubbed some Mrs. Dash over the turkey. It came out nice and moist, unlike most turkey breasts. I usually prefer dark meat because white always comes out so dry, but that wasn't the case with this recipe! :)

Corny Corn Bread

This recipe is great!! Awesome corn bread! I only used one can of corn, and I think it was just the right amount. My only substitution otherwise was using rice milk instead of regular, because we are non-dairy right now. I WILL be making this again! :) Bye Bye Jiffy Mix!! :D

Easy Shake and Bake Chicken

Yummy!!! Very picky kids even ate this! I will be making again! Important to note... MUST use real butter. I imagine that makes all the difference. It would NOT be the same with margarine. AT ALL. And I just LOVE the sage in this... yummm!

Cola Pork Chops

Yummy! I dipped them in a flour/onion salt/garlic powder mixture and fried them lightly before putting them in the dish for the oven. Also used 1/2 ketchup, and 1/2 BBQ and diet coke for the topping. Left out the brown sugar, since the BBQ and coke are already sweet, I didn't think it was necessary. I only baked them for 45 minutes since they were already partially cooked from the frying. Came out delicious! I will definitely be using this recipe again. Thanks!

Pan-Fried Steak with Marsala Sauce

Yummy! I substituted 1 cup beef broth for the chicken broth and Marsala (we don't do alcohol). I didn't have fresh garlic on hand, so used garlic powder. I added one can of mushrooms, and cut up one leek into the sauce. Otherwise followed instructions as posted... yummy!! :)

Blueberry Streusel Muffins
