Fresh Coconut Cake

Very good!! I cut the recipe in 1/3 and still came out with a very good 2 layer cake. Added a little more sugar, and substituted the coconut-water instead of plain old water. Had a bit of trouble too, like the review above, with the icing, but all in all, it still came out yummy. Here's a hint on how to use fresh coconut, (I had to do a bit of research!) Crack coconut open, carefully, you can do this with a screwdriver and a hammer into one of the "eyes", and pour out & save the coconut water. Once you have the coconut in large pieces, (halves more or less) put them on a cookie sheet in an oven heated to 250^ for 10-15 minutes. This will make the meat loosen up a bit from the shell and easier to get out. You'll still probably have to pry. Then there is another layer of brown skin you'll have to slice off with a paring knife before you throw the meat into the food processor. :) It's a little bit of work, but definitely worth it in the end.

Southern Ham and Brown Beans

My hubby raved about this one, he's a big "southern cookin'" fan. :) One thing to note, MAKE SURE you don't keep the pot covered when it is simmering for the 3 hours. I checked on mine about halfway though, and all the liquid had dried up, and the beans were scorching on the bottom of the pot. Thankfully I caught it in time, before anything was burnt too badly, added water, more chili powder and salt and pepper to the mix, and it came out fine in the end. I didn't even notice any extra "smoke" in the taste. ;)

Spareribs and Kraut

Das ist gut!! Just like Mama used to make. :) I used boneless country ribs and they came out nice and tender. I used garlic powder, onion salt and pepper over the ribs before the first bake. I used a can of sauerkraut, (forgot to check how much they called for here before fixing) but next time I'd use two cans, it went quickly! I increased the cooking time to ensure the ribs would be tender. :) This is a keeper!

Beef Tips and Noodles

Flavor is good. I love how easy this is to make. Sauce isn't quite a full "8" servings though. We had 4, and that was about it. WOuld also be better with fresh mushrooms instead of canned. Needs a little something else too, not quite sure what though. Will play with this again, however., :)

Deluxe Corned Beef Hash

A beautiful, colorful, filling dish. However... I really can't say that it knocked my socks off... it's a lot of work for a ho-hum dish. I made exactly per recipe instructions. A solid three-star.

Basic Biscuits

Did not rise at all... don't think it was my ingredients, I'd used them for something else earlier that came out fine. I told my kids these were "bread cookies" and some of them were eaten, but...I didn't care for this recipe.

Oven Meatballs

Yummy!! I was tempted to add some onions or bread crumbs or something to the meat as I was mixing it up into balls, but in the interest of keeping some semblence of this recipe, I refrained. :) Per other reviews, I only used 1/4 cup sugar. I left out the soy sauce and mustard powder, and instead added 1/4 cup BBQ sauce along with 1/4 cup ketchup. I also used red wine vinegar. This was really good! :) I will be keeping this recipe!

Pan-Fried Steak with Marsala Sauce

Yummy! I substituted 1 cup beef broth for the chicken broth and Marsala (we don't do alcohol). I didn't have fresh garlic on hand, so used garlic powder. I added one can of mushrooms, and cut up one leek into the sauce. Otherwise followed instructions as posted... yummy!! :)

Incredible Chicken

Not so incredible. I don't know, this just didn't do anything for me. I was looking for a quick and easy chicken recipe, and while this was it... it just wasn't very good. Husband gave it an "Okay", which earned it an extra star, but that's not saying much.

Ginger Drop Cookies

I would've rated this 5 stars, but I made some drastic changes, so it's not the recipe as written per se. My changes: Instead of stevia, and sugar in the raw (whatever that is) I just used regular old white sugar. I also used white corn syrup. Instead of butter, I substituted the same amount of oil since we're on a dairy-free diet. I did not bother with putting the dough in the fridge for 2 hours, since it was not overly sticky when I was done mixing. I also didn't bother with rolling the balls in extra sugar. With my changes, this was a quick, easy and delicious recipe that I'll be making again, for sure! These are YUMMY and didn't last long at all. Next time though, I will be doubling the recipe. As written, it says it makes 48 cookies, but in fact I only came out with 24, and did not make them overly large. I don't know how the recipe submitter could possibly come up with 48 out of this unless they were fingernail sized cookies. :P

Chicken Chili

Great!! I left out the cocoa and used diced tomatoes instead of the whole... added an additional can of them, as it seemed a bit dry without. I also used canned mushrooms as I had them on hand instead of the fresh. Good recipe!!

Cabbage Jambalaya

YUM! This is the best Jambalayah recipe I've found! My hubby loved it. I did make a few probably unorthodox changes, I was trying to figure out something to do with the "spiced cabbage water" that was left over after having cooked a corned beef a few nights earlier, since my hubby won't eat cabbage by itself. I used this as the base for the Jambalayah, and it came out WOW! I also used Italian Sausage instead of smoked, gave it a little extra kick, and added a bit more spices to perk it up a bit, I also left out the celery and added green peppers. I am definately going to try this one again. (Maybe after next time I do corned beef!) LOL...

Santa Fe Enchiladas

Bland. I did omit the green chiles because I didn't have any on hand. This may have made the difference. So if there's a next time, I'll be adding some fajita spice, and probably using diced tomatoes with chilis, as I'm not much of a tomato paste lover anyway. The microwave approach was different, I've never made an entire dish in the microwave before. From that vantage, it came out better than expected.

Easy Shake and Bake Chicken

Yummy!!! Very picky kids even ate this! I will be making again! Important to note... MUST use real butter. I imagine that makes all the difference. It would NOT be the same with margarine. AT ALL. And I just LOVE the sage in this... yummm!

Rainbow Pasta Salad II

This is awesome pasta salad! The only thing I would change is the amount of onion... I only used 1/2 a red onion instead of the whole as called for, and I STILL feel like it was waaay too much. The onion was a bit overpowering. I will be making this again, definitely, but will be using 1/4 of an onion next time. I also used a basalmic vinegarette in place of the italian dressing.... yummy!
