Beth's Chocolate Chip Cookies

Yummy! My hubby RAVED about these!!! Just make sure to eat them in first couple of days after baking, otherwise they get rock hard, fast! Regardless, this is my new choc chip cookie recipe!

Oven Barbecued Beef Brisket I

Frankly, I was disappointed by this recipe. I was expecting a savory, melt-in-your-mouth, too-falling-apart-to-cut dish, and ended up with a good-tasting, but rather tough hunk of meat. I followed recipe directions exactly, with the exception of adding a BBQ rub before cooking. I'm still looking for a good brisket recipe, as this is NOT it.

Southern Ham and Brown Beans

My hubby raved about this one, he's a big "southern cookin'" fan. :) One thing to note, MAKE SURE you don't keep the pot covered when it is simmering for the 3 hours. I checked on mine about halfway though, and all the liquid had dried up, and the beans were scorching on the bottom of the pot. Thankfully I caught it in time, before anything was burnt too badly, added water, more chili powder and salt and pepper to the mix, and it came out fine in the end. I didn't even notice any extra "smoke" in the taste. ;)

Cabbage Jambalaya

YUM! This is the best Jambalayah recipe I've found! My hubby loved it. I did make a few probably unorthodox changes, I was trying to figure out something to do with the "spiced cabbage water" that was left over after having cooked a corned beef a few nights earlier, since my hubby won't eat cabbage by itself. I used this as the base for the Jambalayah, and it came out WOW! I also used Italian Sausage instead of smoked, gave it a little extra kick, and added a bit more spices to perk it up a bit, I also left out the celery and added green peppers. I am definately going to try this one again. (Maybe after next time I do corned beef!) LOL...

Fresh Coconut Cake

Very good!! I cut the recipe in 1/3 and still came out with a very good 2 layer cake. Added a little more sugar, and substituted the coconut-water instead of plain old water. Had a bit of trouble too, like the review above, with the icing, but all in all, it still came out yummy. Here's a hint on how to use fresh coconut, (I had to do a bit of research!) Crack coconut open, carefully, you can do this with a screwdriver and a hammer into one of the "eyes", and pour out & save the coconut water. Once you have the coconut in large pieces, (halves more or less) put them on a cookie sheet in an oven heated to 250^ for 10-15 minutes. This will make the meat loosen up a bit from the shell and easier to get out. You'll still probably have to pry. Then there is another layer of brown skin you'll have to slice off with a paring knife before you throw the meat into the food processor. :) It's a little bit of work, but definitely worth it in the end.

Banana Smoothie

Is easy, but it is too sweet. I do like the fact that it doesn't include any eggs in the recipe. Don't know if I'll try it again, but if I do, I'll use much less honey.

Santa Fe Enchiladas

Bland. I did omit the green chiles because I didn't have any on hand. This may have made the difference. So if there's a next time, I'll be adding some fajita spice, and probably using diced tomatoes with chilis, as I'm not much of a tomato paste lover anyway. The microwave approach was different, I've never made an entire dish in the microwave before. From that vantage, it came out better than expected.

Baked Spaghetti with Chicken

I did not care for this recipe. The chicken by itself would've been good, but the baked pasta was dry and just blah. I also thought the broccoli just didn't blend well tastewise at all. Won't be making this one again.

Hearty Skillet Supper

To be honest, I didn't have very high expectations for this recipe. It did come out better than expected, and was a nice mid-week family meal. I left out the soy sauce, as I'm on a non-soy diet, and the results were still positive. :)

Recipe is good!!! Cookies come out soft and yummy. I'm not too sure about the chilling... it didn't seem to make much difference as far as stiffening the batter enough to roll them into balls. The batter was still sticky... next time I plan on just scooping like normal cookies, and not bothering with the rolling. Also, rolling the batter into the topping was pretty messy as well. It would be much easier/ prettier to just sprinkle the topping on, again like normal. This recipe is a keeper though!

No-Fuss Meat Loaf

Good! My husband said this one was a keeper! I did think it was a bit obvious that it was stuffing mix in the meat... so if you like to keep your recipe secrets a mystery, this is NOT the one for you. Tastes good though! I topped mine with BBQ sauce rather than ketchup.

Rosemary Pork Roast

Delicious and easy! You can't go wrong here! I just rubbed garlic powder on along with the rosemary instead of cloves, and it came out yummy. Easy + yummy = KEEPER!

Beef Pot Roast

Very good! I usually just plunk a pot roast in the crockpot and let it stew all day, but I wanted something a little more traditional this time around. Yum! It came out nice and tender, and with plenty of accompanying juices/gravy. Will be making again!!

Cider Vinegar Chicken

Chicken came out good! Thanks to a liberal drizzling of honey over to top of the chicken breasts because I wasn't gutsy enough to try this as written... and I'm usually a vinegar lover! The vinegar and garlic combination smelled heavenly as I was putting it into the oven, but there wasn't any taste any of that flavor left after it was done cooking... and the vinegar left sort of a metallic aftertaste that I didn't appreciate. I used 1/2 red wine and 1/2 cider vinegar. I won't be trying this again I don't think, chicken breasts are pretty hard to mess up and there are lots of better recipes out there just as easy.

Quick, Homemade Hamburger Soup

Good!!!!! I left out the tomato sauce, added some seasoning salt, garlic, basil and oregano. I think it might've been a touch on the bland side without the spices, but this is a keeper now!

The Best Rolled Sugar Cookies

I made this before reading reviews, and while the dough rolls out real well, the taste does not "wow." Now that I've read the reviews, I will be adding more sugar/vanilla next time I make, perhaps even a pinch of cinnamon to help perk these up.

Italian Bread Using a Bread Machine

The absolute BEST bread I've ever made. FORGET store bought loaves... this is soo easy and comes out melt-in-your-mouth PERFECT... I made recipe exactly as is... nothing else needed, nothing else subtracted. AWESOME, AWESOME, AWESOME! :D :D :D

Apple, Carrot, Or Zucchini Cake

I halved the recipe, and used 1 cup of grated zucchini and 1 cup of grated apple. (1 small zucchini and 1 small apple.) in a square casserole dish. It came out yummy, and beautifully moist. Like the other reviewers have stated, the batter comes out oddly dry and crumbly until the zucchini is added, but that takes care of it, and no extra ingredients are needed. Will be making this one again, so easy and delicious!
