Deluxe Corned Beef Hash

A beautiful, colorful, filling dish. However... I really can't say that it knocked my socks off... it's a lot of work for a ho-hum dish. I made exactly per recipe instructions. A solid three-star.

Basil Pork Chops

Yummy!! I asked my hubby if this was a "keeper" recipe, and he replied... not only was it a keeper, it was a keeper-close! ;) Can't have higher praise than that! :) I did not change a single thing, made the entire recipe exactly as written. Delish!!

Basic Biscuits

Did not rise at all... don't think it was my ingredients, I'd used them for something else earlier that came out fine. I told my kids these were "bread cookies" and some of them were eaten, but...I didn't care for this recipe.

Easy Caramelized Onion Pork Chops

Wow.... waaaay too salty for us. The pepper adds a bit of a bite, but the overwhelming salt really overpowers any flavor the meat would've had.

Spiced Pumpkin Seeds

Wouldn't change a thing! I even used Rice milk instead of the normal, and they came out delicious. (Rice milk usually dries breads out.)

Quick Brown Rice and Mushroom Pilaf

This was great. I left out the chicken broth and the parsley and walnuts because they weren't on hand... and I used canned mushrooms, and it was still good. Looking forward to trying it with those ingredients next time! :)

Incredible Chicken

Not so incredible. I don't know, this just didn't do anything for me. I was looking for a quick and easy chicken recipe, and while this was it... it just wasn't very good. Husband gave it an "Okay", which earned it an extra star, but that's not saying much.

German Style Kielbasa

I made a few changes... sauteed an onion and two stalks of celery with two large apples, and added two cloves of garlic and a handful of raisins. Cooked all until they were soft. Added the sauerkraut and sausage, three TBL of brown sugar, and a dash of nutmeg. Two thumbs up!

Pizza Dough I

Makes a yummy crust. I was disappointed in that it makes a rather small pizza, I had to switch out pans once the dough was done mixing, and I realized how much I actually had. It is also fairly hard to work with to cover the pan, not a real smooth, elastic dough. Despite those issues though, the taste is wonderful, so I'll award it 4 stars. :) I did add some garlic powder and oregano to the mix to add some additional flavor. I also added corn meal to the pan before putting the dough on to add some authenticity. ;)

Red Beans and Rice

A very good, stick-to-your-ribs, cold-weather recipe. It's even good without the green pepper. I know this recipe is of cajun origin, but I had a friend call it "Red Deagon Goulash." I hadn't heard of that, found it interesting. :) A good recipe, we'll be using it again.

Apple and Spice Pork Roast

This was very good! I used a bone-in roast, and instead of applesauce, I grated fresh apples. The only complaint I have, is that the cooking times are a bit on the short side. At the end of the specified time, my roast was still bloody... and this was even with a bone-in, (which should've shortened the time!) As I had dinner guests at a certain time, I was forced to throw the roast into the microwave to make up the additional time needed. Despite this, it still came out yummy!

Cranberry Pork Chops II

Yummy!!! I didn't have fresh cranberries, so used a can of whole cranberry sauce with only 1/2 cup sugar. I also added 1/2 a chopped onion for some additional flavor. I did not need to add any water as the recipe stated as the chops made their own liquid. As a matter of fact, I had to add a bit of flour to thicken the sauce into a gravy consistency. This was delicious!

Still tasted like sweet potatoes, and I'm not much of a fan... they came out soggy rather than crispy, and some of them burnt. I guess they'd be alright if you were a big fan of sweet potatoes...

Ginger Drop Cookies

I would've rated this 5 stars, but I made some drastic changes, so it's not the recipe as written per se. My changes: Instead of stevia, and sugar in the raw (whatever that is) I just used regular old white sugar. I also used white corn syrup. Instead of butter, I substituted the same amount of oil since we're on a dairy-free diet. I did not bother with putting the dough in the fridge for 2 hours, since it was not overly sticky when I was done mixing. I also didn't bother with rolling the balls in extra sugar. With my changes, this was a quick, easy and delicious recipe that I'll be making again, for sure! These are YUMMY and didn't last long at all. Next time though, I will be doubling the recipe. As written, it says it makes 48 cookies, but in fact I only came out with 24, and did not make them overly large. I don't know how the recipe submitter could possibly come up with 48 out of this unless they were fingernail sized cookies. :P

Luscious Lemon Snaps

This one is hard to review. Had I rated them right out of the oven, I would've given it ONE star and called them a waste of good lemons. The next day, however... they improved! Somehow... they were still chewy and not what I expected, but maybe they grew on me overnight. Who knows.

Happy Birthday Cake

Edible, but BARELY. Brick-like comes to mind. Very heavy and dense. It'd be more like a bread than a cake, if breads were even this heavy. Cooking time per recipe instructions is waaaaay off. At 35 minutes, the batter was still soupy. I had to double the time. Lesson learned the hard way with this recipe... always test a recipe before serving at a function. :(

Oven Meatballs

Yummy!! I was tempted to add some onions or bread crumbs or something to the meat as I was mixing it up into balls, but in the interest of keeping some semblence of this recipe, I refrained. :) Per other reviews, I only used 1/4 cup sugar. I left out the soy sauce and mustard powder, and instead added 1/4 cup BBQ sauce along with 1/4 cup ketchup. I also used red wine vinegar. This was really good! :) I will be keeping this recipe!
