I would've rated this 5 stars, but I made some drastic changes, so it's not the recipe as written per se. My changes: Instead of stevia, and sugar in the raw (whatever that is) I just used regular old white sugar. I also used white corn syrup. Instead of butter, I substituted the same amount of oil since we're on a dairy-free diet. I did not bother with putting the dough in the fridge for 2 hours, since it was not overly sticky when I was done mixing. I also didn't bother with rolling the balls in extra sugar. With my changes, this was a quick, easy and delicious recipe that I'll be making again, for sure! These are YUMMY and didn't last long at all. Next time though, I will be doubling the recipe. As written, it says it makes 48 cookies, but in fact I only came out with 24, and did not make them overly large. I don't know how the recipe submitter could possibly come up with 48 out of this unless they were fingernail sized cookies. :P
