Cheesy Potatoes

Not great. Kinda blah. The version of these where you fry them on the stove, or bake them in the oven... either way, is lots better than microwaving them like this. Won't be making them this way again, despite the time is saves.

Herb Rubbed Sirloin Tip Roast

After 1 hour my cut of meat came out far too rare. I'm all for rare, but this was RAW. The rub was waaaay too salty and a bit too spicy for my tastes. I scraped most of it off, and threw the roast in the microwave for another 15 minutes, and then it came out GOOD! I will try to make this again, but I will change the rub and leave the roast in the oven longer.

Pan-Fried Steak with Marsala Sauce

Yummy! I substituted 1 cup beef broth for the chicken broth and Marsala (we don't do alcohol). I didn't have fresh garlic on hand, so used garlic powder. I added one can of mushrooms, and cut up one leek into the sauce. Otherwise followed instructions as posted... yummy!! :)

Beef Tips and Noodles

Flavor is good. I love how easy this is to make. Sauce isn't quite a full "8" servings though. We had 4, and that was about it. WOuld also be better with fresh mushrooms instead of canned. Needs a little something else too, not quite sure what though. Will play with this again, however., :)

Easy Shake and Bake Chicken

Yummy!!! Very picky kids even ate this! I will be making again! Important to note... MUST use real butter. I imagine that makes all the difference. It would NOT be the same with margarine. AT ALL. And I just LOVE the sage in this... yummm!

Savory Mushroom Sauce

We are on a non-dairy diet, and this recipe is easily adaptable to that (rice milk). I served it over pasta as a non-dairy alfredo substitute idea, and it was good!!

Poke Cake I

I was a little leery about making this, I was worried it would come out a soggy mess. I was pleasantly surprised. It came out pretty well. I used a wooden spoon to poke the holes instead of a fork, as I was wanting obvious jello sections rather than mush, and it worked. I also used cherry flavored jello instead of strawberry, as it has a slightly stronger and more obvious flavor. Came out good, a great Christmas dessert. :)

Chicken Potato Bake

I didn't have any actual Italian Dressing on hand, so I kinda made my own.. drizzled a bit of olive oil over the chicken, italian seasoning, salt, pepper, etc. It came out yummy. I didn't do a full Lb of potatoes, but really wish I had... next time!

Grilled Zucchini and Squash

I use olive oil instead of butter since we're on a non-dairy diet. Also, any seasons can be substituted for the ones in the recipe. I enjoy some garlic powder, salt, pepper, and some rosemary. :)

Mary's Meatloaf

This was only a so-so recipe. It came out very wet and crumbly and did not stay together well. I did enjoy the mustard/sugar sauce on top, that was a nice touch, but otherwise there are better standby meatloaf recipes.

Potato Dumplings II

I did not care for this recipe. Sticking with old-fashioned biscuit dough dumplings from here on out. These had little to no flavor, even after I boiled them in chicken stock instead of water and added garlic and herbs to "help". :P
