Caramels I

These were butttery and had a nice smooth texture, but they didn't take on the deep caramel flavor I was looking for. I would try this recipe again with more sugar and less corn syrup, as 1 1/2 cups isn't really necessary to keep the sugar from crystallizing and it doesn't bring that deep caramel flavor. That being said, this recipe results in a nice light, buttery, caramel.

Oatmeal Peanut Butter Cookies

Nothing extraordinary, but overall a very good basic cookie recipe. The brown sugar and oats lend a warm, homey flavor to the cookies. Don't be tempted to increase the size of the cookies - 1 Tbsp really does result in the best cookie! I replaced butter for the margarine because I find that baked goods made with margarine tend to have a greasy, oily texture.

Mom's Lasagna

Super simple, easy recipe that results in a soft, cheesy lasagna. Use ricotta instead of cottage cheese if you want the lasagna to be a little sturdier; both versions are good. I used a little more than half a packet of onion soup mix due to the high salt content.

Fresh Pineapple Upside Down Cake

I loved using fresh pineapple rather than canned in this cake, and the recipe resulted in a very dense cake with a rich, buttery sauce. My only problem was that after 25 minutes at 400 degrees, the outside of the cake was charring while the inside was still raw. It solidified a bit after cooling, but was still a little doughy in the middle when it came to serving time.

Buttercream Icing

This recipe is creamy with a silky mouthfeel. I used all butter (what I had on hand) and half and half instead of milk (again, what I had on hand). I also only used a little over 3 cups of sugar, since my cupcakes were very sweet by themselves. This recipe made enough to frost 24 cupcakes and had extra leftover. Good enough to eat right off the beaters!
