Skillet Fiesta Chicken and Rice

Reviewed: Oct. 15, 2012
I diced the chicken into bite-sized pieces before cooking. In addition to the chili powder I added 1 tsp each of garlic & onion powders. I also put in 1 can each of corn & green beans. When finished cooking, I put everything into a 9x9 or 8x8 square baker, topped with cheese & baked @ 400 degrees for 15 minutes or so.

Very good, but I'd add more salt & seasonings next time.

Deep South Fried Chicken

Very good, reminds me of the chicken my brother would bring home from his work when I was a kid. It was the best chicken I've had!

Pesto Chicken Florentine

Reviewed: Aug. 25, 2012
Made this for the first time when we had friends over for dinner this week. Got great reviews from everyone! I read the reviews & grilled the chicken first then placed it in aluminum foil. I used an entire bag of spinach, which I chopped a little, along with mushrooms. Very good & is definately a keeper.

Miniature Cheesecakes

Reviewed: May 27, 2012
We made these, but made them in miniature muffin pans, baked at 350 for 15 minutes. Based on reading the other reviews, we also omitted the nutmeg & used 1-1/2 tsp of vanilla. They got rave reviews at our party.
