Whole Wheat Cut Out Cookies

Just made these today and they are delicious! I substituted 1/2 cup of non-fat greek yogurt for 1/2 of the butter, just because I only had 1 stick, but I will do this every time now. These make a nice, soft cookie (baked for 12 minutes) and definitely remind me of honey graham crackers. My very picky toddler loves them, and I didn't even frost them!

Banana Bran Muffins

These are so good that I'm having a hard time not eating the entire batch at once! The only change I made was to use all white whole wheat flour. Next time, just for fun, I will experiment with replacing the sugar with honey, as suggested by other reviewers.

Tofu Parmigiana

This was fantastic! I followed the recommendations to bake the tofu instead of fry it, and it was easy and we certainly didn't miss the fat. Definitely freeze the tofu first to get all the water out of it and improve the texture. My 2 year old daughter, who is a very picky eater and normally won't touch what we are having for dinner, ate my entire portion of tofu and then stole the leftovers 2 days later.

Tofu Sandwich Spread

This is excellent! I always keep tofu in the freezer, so that step was no problem for me. The modifications I made were to use half a small yellow onion, 1 TBS Bragg's Liquid Aminos instead of soy sauce, omit the lemon juice and add curry powder and paprika. I will definitely make this again.
