Chicken Kabobs Mexicana

Reviewed: Jul. 17, 2008
I marinated it overnight, and it was sooooo goood. I loved the fresh cilantro. Very tender and juicy. The cumin gave it a wonderful flavor.

This was so fabulously good! I made it exactly according to the recipe. I will definitely make it again.

Oven Pot Roast

Reviewed: Mar. 23, 2007
Very yummy! The gravy was so tasty! Served it with mashed red potatoes and steamed carrots. The only thing is that the gravy was way too thick by the time the meat was done. Next time, I will add more liquid to the gravy, as well as doubling it. There wasn't enough!

Penne Pasta with Spinach and Bacon

Reviewed: Apr. 30, 2007
I always follow the recipe EXACTLY the first time I make it if I am planning on doing a "review." Otherwise, how can you trust the "stars" if everyone is rating it based on changing the recipe? This was extremely yummy. Very flavorful. Easy to make. DELICIOUS! I found none of the problems that other reviewers did.

I thought I wouldn't like the sweetness of the sauce, but oh my gosh, this dish is FANTASTIC!!!!

Actually Delicious Turkey Burgers

Reviewed: Jul. 19, 2008
Soooo good. Very flavorful and juicy. I made it exactly according to the recipe, but I see how some reviewers suggestions could be good, such as diced red bell pepper.

Chicken Souvlaki Gyro Style

Reviewed: Mar. 9, 2009
I made minimal changes to this recipe, and I think you'll agree that they didn't fundamentally change the recipe. I don't like to review recipes that I change because then it's not really the real recipe, know what I mean? Changes I made: I cooked the chicken on the stove in the marinade instead of on the grill. It intensified the flavor of the chicken and was VERY good. I chopped the cucumbers instead of shredding, and I used white wine vinegar instead of rice vinegar because that's what I had. This was SOOOO good. My 2 year old daughter gobbled it up. She especially like the "stinky sauce," as she called it. I agree with her. It was so good, I could sit and eat it straight from the bowl with a spoon! Definitely a keeper.

Almost Stuffed Peppers

Reviewed: Mar. 13, 2009
This was really, really good. Better than I expected for something so simple. I doubled the bell pepper, added some chopped garlic, and used ground turkey instead of ground beef. It was also very quick and easy. We will add this to our dinner rotation.

These were the best pancakes I have ever had. I used blueberry yogurt and frozen blueberries. So flavorful, moist, and DELICIOUS!

Shrimp Enchiladas Suizas

Reviewed: Aug. 1, 2009
The best thing about these enchiladas is the sauce. So tangy and delicious. Fresh tomatillos are so yummy. It did take longer to make than the recipe stated, though, so budget a extra half hour.

Chickpeas in Tomato Sauce With Feta and Wine

Reviewed: Aug. 1, 2009
This is VERY good, especially for a vegetarian recipe. If you aren't a vegetarian, throw a couple of chicken breasts on top and serve it with brown rice. Delicious.

Slow Cooker Texas Pulled Pork

Reviewed: Aug. 25, 2009
YUM. I skipped the vegetable oil. It was unnecessary. I had to use dried onion because my husband hates fresh. This was so tender and flavorful. It cooked all day on low and was ready when we got home from work. Made great leftovers too.

No Bake Peanut Butter Pie

Reviewed: Sep. 2, 2009
This is super easy and SO GOOD. I seriously cannot tell you how YUMMY this pie is. It's pretty rich, so you can cut smaller slices and still be satisfied. I cut mine into 8 pieces and that was perfect.

Baked Chicken

Reviewed: Oct. 14, 2009
Very good. I liked how the sour cream mixture "stuck" to the chicken. Needed more corn flakes.

This is my comfort food. Only thing I do differently is add some sharp cheddar cheese to the green bean mixture. Yum.

Wilted Spinach

Reviewed: Apr. 12, 2010
This is very good and very easy. But there is way too much dressing for the amount of spinach. The second time I made it, I doubled the spinach and halved the dressing and sprinkled with feta. YUM YUM YUM.

Goat Cheese Stuffed Lamb Burgers

Reviewed: Aug. 27, 2010
These were INCREDIBLE. I did do one thing a little bit different. I mixed the herbs into the meat because I followed other reviewers' advice and froze the cheese in discs and placed them between two thin patties. No leaking cheese.

Baked Ziti

Reviewed: Feb. 9, 2011
I made this as written, only adding Italian seasoning to the meat. It was simple, quick prep, and DELICIOUS. My 1 year old and 4 year old gobbled it up. The leftovers were good too. I think next time I will make double the recipe and freeze one for an easy "throw it in the oven" work-night meal. This one is going in my rotation.
