Reuben Sandwich II

This is a great, basic reuben. The only change I made was to use sourdough instead of rye bread since we don't like rye. I also followed other reviewers suggestion to heat the sauerkraut and the meat before grilling the sandwich to make sure it was hot all the way through. Grilled it in our panini maker and it was delicious.

Pierogies and Cabbage

Used turkey kielbasa instead of bacon and packaged cole slaw mix, but everything else according to recipe. We loved it! Even my 3-year-old ate it. It wasn't a heavy dish with the change of kielbasa for bacon, was very colorful. The only thing I would change is I actually found it a little bland and will add more vinegar and more salt next time. Definitely a keeper!

Blue Cheese Burgers

I used real Dijon mustard instead of powdered mustard, added some crumbled bacon, and that made all the difference. Rated a 4 because I think it was my additions/changes that really made it better.

No Bake Peanut Butter Pie

This is super easy and SO GOOD. I seriously cannot tell you how YUMMY this pie is. It's pretty rich, so you can cut smaller slices and still be satisfied. I cut mine into 8 pieces and that was perfect.

Slow Cooker Texas Pulled Pork

YUM. I skipped the vegetable oil. It was unnecessary. I had to use dried onion because my husband hates fresh. This was so tender and flavorful. It cooked all day on low and was ready when we got home from work. Made great leftovers too.

Green Eggs and Ham Quiche

I should have expected it from the title, but it was an unpleasant green color. It tasted GREAT, but the color was a bit offputting. Next time, I will just do what I usually do when I make baked eggs with spinach and keep the leaves whole to avoid the color issue. Also, I think a bit of garlic powder, touch of salt and pepper would improve this recipe. Overall, though, a keeper.

Slow-Cooker Chicken Tortilla Soup

This was good. Not great, but good. However, good, along with easy, quick, and cheap makes it perfect for a busy working mom of two. I actually found it sort of bland, though my husband (the wimp) thought it was quite spicy. I don't like corn, so we subbed kidney beans. I think some lime juice would make a difference, kick it up a bit, maybe some hot sauce too or jalapenos. We will keep it in our rotation.

Chickpeas in Tomato Sauce With Feta and Wine

This is VERY good, especially for a vegetarian recipe. If you aren't a vegetarian, throw a couple of chicken breasts on top and serve it with brown rice. Delicious.

Shrimp Enchiladas Suizas

The best thing about these enchiladas is the sauce. So tangy and delicious. Fresh tomatillos are so yummy. It did take longer to make than the recipe stated, though, so budget a extra half hour.

Slow Cooker Chile Verde

Good, but a bit bland. I used Herdez tomatillo salsa. After I added some cumin and oregano, and let it simmer another hour, it was MUCH better. Served it with tortillas, over rice, with a dollop of sour cream on top. Yummy!

Chicken Chimichangas with Green Sauce

My husband liked it. My toddler liked it. I just wasn't really impressed. These chimis were okay. Not bad. Not great. Just okay. But since the family liked them, I'll give it a four. Personally, I'd give it a three. Also, the sauce tasted better once I mixed some sour cream in with it.

Almost Stuffed Peppers

This was really, really good. Better than I expected for something so simple. I doubled the bell pepper, added some chopped garlic, and used ground turkey instead of ground beef. It was also very quick and easy. We will add this to our dinner rotation.

Chicken Souvlaki Gyro Style

I made minimal changes to this recipe, and I think you'll agree that they didn't fundamentally change the recipe. I don't like to review recipes that I change because then it's not really the real recipe, know what I mean? Changes I made: I cooked the chicken on the stove in the marinade instead of on the grill. It intensified the flavor of the chicken and was VERY good. I chopped the cucumbers instead of shredding, and I used white wine vinegar instead of rice vinegar because that's what I had. This was SOOOO good. My 2 year old daughter gobbled it up. She especially like the "stinky sauce," as she called it. I agree with her. It was so good, I could sit and eat it straight from the bowl with a spoon! Definitely a keeper.
