Greek Lamb-Feta Burgers With Cucumber Sauce

I've had this recipe in my box for a while, and only recently made it for the first time. I thought it was a good burger, and I'll definitely make it again. However, I must note that I didn't use Lamb meat. I used ground turkey. I'm from a po'dunk town so even having ground turkey here is a treat. The turkey meat still made a yummy burger, and I even added a little oatmeal (don't really know if it was necessary, but I did). The only other thing I might add for next time is salt and pepper (which I didn't in this recipe, for a little more seasoning). Also, for my cucumber sauce I had a Tzatziki recipe that was dill, lemon juice, garlic, and yogurt so that is what I followed.

Tomato, Corn and Avocado Salsa

The picture for this recipe may be a little off-putting, but as they say: "You can't judge a book by its cover." This recipe is 5-stars for me! My family loves this stuff!! I love all the fresh ingredients (except the red pepper which I don't add). I like it salty with the lime juice (especially on my avocados), but all the flavors fuse really well. I add a can of drained black beans in it, which makes it better. We eat this salsa on fish tacos or by itself with chips.

Grilled Fish Tacos with Chipotle-Lime Dressing

WOW! I found this recipe yesterday and decided to cook it for dinner. I wasn't able to marinate the fish for the 6-8 hours it recommends but it was still awesome! I'm sure if I had the time to marinate it longer this would've been even better!! My family (3 big strapping guys) scarfed them down in no time. The only thing was the chipotle dressing I made to go with it. I haven't had much experience with adobo sauce and chipotle peppers so...I just added as much of the sauce I could get out of the can...let's just say it definitely had a kick or punch to it. So watch out when you make the dressing. I also made a salsa from a recipe I found here on allrecipes.com, it had corn, black olives, tomatoes, and avocado in it. It was YUMMY as well. Other than the little too spicy chipotle dressing, this recipe was like a Pescado Fiesta in your mouth!!
