Jalapeno Chicken II

Reviewed: Jun. 26, 2011
This was good but I used cheddar cheese instead of cream cheese since we have never liked that with our poppers. Next time I will include a bit more cheese and maybe use thicker bacon. I may also look altering the dressing or just using a good rub. Good recipe that can be modifier to one's taste.

Curry Chicken Salad

Reviewed: Jun. 26, 2011
The flavors just didn't work for us. It was nice to find a recipe that didn't have grapes and nuts but I'll have to try other seasonings for it to suit us.

Cuban Ropa Vieja

Reviewed: May 2, 2011
I must have missed something as it didn't seem to have much flavor to it. The meat was well cooked but I don't know what was missing.

Stuffed Mexican Peppers

Reviewed: May 2, 2011
These were decent and if you like stuffed peppers they're just another variety of that. I was hoping they would be different enough for my husband to be Ok with them as he doesn't prefer stuffed peppers but they were not. Won't be making again but only because of personal preferences - would encourage others to try though.

Obviously use what suits your taste for pizza type toppings but the pizza sauce adds a nice something different to it

Banana Split Bars

Reviewed: Mar. 2, 2011
I made a pie for this since it is only hubby and I. The flavors were pretty good but I don't think I creamed the cheese enough as it was hard and messy to spread. I did think it was missing just a little something but not sure what that was. I'll go back and read other reviews to see if there are other changes I might want to make

Sarge's EZ Pulled Pork BBQ

Reviewed: Feb. 25, 2011
Was a good easy way to cook the pork and with the right BBQ sauce it should be good (we had a sweeter kind in the house which is not normally our preferecne). I also have to turn my slow cooker up a notch or two otherwise it has to cook too long (not the recipe's fault).

Teriyaki and Pineapple Chicken

Reviewed: Feb. 25, 2011
Was not for us. Followed exactly as directed. I don't know what the overpowering taste was in it but I could barely get past it. We did eat it as it was not inedible but will not make again.

Buffalo Chicken Fingers

Reviewed: Dec. 30, 2010
WOW - really good and I like the fact that they are not deep fried. I would like them to be crispier and will try broiling and maybe panko crumbs but the flavor is right there. I did pre-soak them in wing sauce and once cooked I coated them with a hot sauce/butter mixture and baked a few minutes longer.

Slow Cooker Carnitas

Good flavor. It does seem to dry out easy especially once you crisp it up in the oven so you have keep the leftover sauce handy to moisten.

Broccoli Rabe with Portobello Mushroom

Reviewed: Nov. 5, 2010
This had good flavors but the store didn't have very good broccoli rabe or any broccolini so I used what they had but I felt like it was lacking because of this. I will try again with some good rabe or broccolini next time as again I felt the flavor was good.

Broccoli Cheese Soup

Reviewed: Nov. 5, 2010
Has good flavor. I used 1 1/2 packages of the cheese as well as fresh broccoli and garlic. I left my pieces of broccoli fairly big and I used an immersion blender to chop it after it was cooked and I chopped it too much so I didn't have the chunks of broccoli that I would have liked. Next time I will only blend about 1/2 the broccoli and then have some smaller cut pieces to keep some chinks in the soup.

Beef and Roasted Red Pepper Sandwiches

Reviewed: Nov. 5, 2010
My hubby is not too kean on store bought deli roast beef so I purposely bought a 4 lb prime rib and cooked it traditionally on Sunday with that being the Sunday meal for hubby and I. We made a bit extra ajus and save a good bit of the meat and ajus to make these sandwiches. On Tuesday I sliced the remaining meat as thin as I could and added to the ajus in a pan. I let it slow simmer for about 1/2 and hour and then assembled the sandwiches as per the recipe. They came out really good and was a nice change. Will make again but probably only when we do a rib as indicated above.
