Luscious Chicken Casserole

Really easy, quick and tasted great. You can tweak this so many ways too. I made it as directed and served it with broccoli. The next day I mixed them together, tasty! Would add broccoli at the beginning next time. Mushrooms or black olives would be good too.

Hearty Mince

I tried all the suggestions to boost the flavor of this dish, but it just didn't work for me. I even added tomato sauce instead of tomato juice. Way too bland for us.

This is one of my favorite dishes. I love the texture of the pine nuts. Sometimes I use light coconut milk, it's not quite as rich and velvety, but still very tasty.

Nutty Granola II

Thought this was just OK. Mine needed some more flavor and it didn't bind together. But I'm not giving up though. Next time I will add more cinnamon, honey and add brown sugar and vanilla. I will also try adding banana like another recipe from this site uses.

Granola

I thought this was a bit too dry and pasty tasting. It does get cruchy, but you have to bake it a long time. I like that it uses bananas and dates (although I used prunes instead). I think I will try to incorporate them into other granola recipes that use oil.

Unbelievable Chicken

Wow this is really good! The chicken was so tender and juicy. Everyone thought it was delicious. Next time I think I will use chicken with the skin, since I prefer to grill chicken with the skin on. I will also try using this for kabobs like another user suggested.

Guinness® Corned Beef

I really liked this, in spite of my rubber corned beef. I ended up having to pressure cook it for over 30 minutes to make it chewable, but that is not the fault of this tasty recipe. I put carrots, potato, and cabbage in the bottom of the pan. The cabbage turned out soooo good, it was the best cooked cabbage ever!

Pork Chops with Apples, Onions, and Sweet Potatoes

We loved this! It is very simple, but the combination is delicious. I had trouble with the sweet potatoes being undercooked and dried out the first time and had to microwave them the rest of the way. Now I slice them thinner and put them near the bottom and outside of the pan. I also used a very dark brown sugar, much darker than regular store brands so it had a deeper molasses flavor. The type of apple makes a big difference also. We prefer a middle of the road apple as far as sweetness. The Granny Smith was a bit too tart, but can be balanced with more brown sugar.

White Chili I

Was looking for a recipe to use up ground pork, what a find! This is really great! Have made this many times since. I only use one can of green chiles, 2 cans of beans and add an extra cup of broth (or 2). Not thick like chili, more like a soup. Might try thickening it like others suggest, but it is soooo good as is. Never been tempted to use ground turkey either, the ground pork is excellent and a nice change of pace. Make sure you cook the cumin and oregano for the 2-3 minutes like the directions say.
