Peanut Butter Chip Chocolate Cookies

These are great - really soft and chewy, almost like a brownie bite. I used 1/2 c peanut butter & 1/2 c smart balance instead of butter, and then added white chocolate chips. Yummy!

Garlic Mashed Potatoes Secret Recipe

Like almost everyone else, I didn't need to cook for 100 (wondering how often home cooks make mashed potatoes for 100...? But I digress). I used 3lbs potatoes and 4 tablespoons (1/2 a stick) of butter, plus a few splashes of milk and 2 spoon-fulls of fat free sour cream to make up for the lack of butter... Just couldn't bring myself to add that much butter! I used a whole head of roasted garlic and then added a spoon-full of minced garlic too. I've never been a huge fan of garlic mash because I'm a purist and love plain ol' mashed taters, but the BF requested garlic. It was a good call on his part - these were DELICIOUS!

Quick and Easy Pizza Crust

In a word: Awesome. I used 1 cup whole wheat flour and took the advice of other reviewers to add some spices (garlic, onion, basil, oregano). The BF said it was better than delivery!

Baked Oatmeal I

SO GOOD!!! I used applesauce instead of oil and no white sugar. I did mix in about 1 tablespoon of brown sugar and a little cinnamon instead of on top. Honestly, I don't think you need any of the sugar - especially if you top it with some frozen but thawed berries (with all that yummy juice) and a little milk. Deeeelish!

Whole Wheat Oatmeal Bread

Easy and yummy. I switched the whole wheat and white flour amounts and subbed brown sugar for honey (not a honey fan). The the last time I made it I used applesauce instead of butter - turned out great!

Slow Cooker Spicy Chicken

Really yummy. I used a little extra tomato sauce since I had a small can and didn't want to save a small amount. I'm glad I did because I think the chicken needed the extra sauce. I served this in a tortilla with shredded cheese, broccoli slaw, lettuce, and jalapenos. It was a hit!

Bread Machine Rolls

These are awesome! I didn't have any dry milk powder so I used skim milk instead of water and they turned out great! I also didn't bother with the egg wash - they were still yummy and barely lasted one day in our house :)

Brunch Egg Bake

I changed a few things based on preference - used chopped turkey sausage instead of ham, fresh mushrooms instead of canned, and spinach instead of green onions. Made this for Sunday brunch and it was a hit! Plus, it is so incredibly easy. Thanks for the recipe!

Classic Bran Muffins

I substituted mashed banana for the oil, used about half as much sugar and dried cranberries instead of raisins. After I made the batter I realized my muffin pans were already packed (ah the joys of getting ready for a move) so I used an oversized loaf pan instead and added about 10 minutes to the baking time - turned out great!

Taco Seasoning I

This was really great! I took the advice of other reviewers and used 2 tsp of cornstarch mixed with 2/3 c water for 1 lb ground beef. It initially seemed like way too much seasoning for just 1 lb of ground beef, but I gradually added it all and I was glad I did. Delish!

Enchilada Casserole III

Like so many reviews suggested, I used a can of enchilada sauce and it worked perfectly. I also used ground turkey cooked with a packet of taco seasoning. Super easy and delicious. The boyfriend & I loved it :)

Tuna Noodle Casserole I

I followed the advice of many of the reviews - I doubled the tuna & the sauce (and added about a half cup extra milk). The texture was fine, but it still probably could have done with more sauce. I used chopped fresh baby portobello mushrooms and a bag of frozen mixed veggies instead of canned peas. I also used a light celtic cheddar from trader joe's and added a little frank's hot sauce just to make sure it wouldn't be bland like so many tuna noodle recipes. The boyfriend and I both had seconds :)

Tomato Soup I

This definitely needs some more tomato. I had my boyfriend taste it before adding anything extra and he said it tasted like onion soup, not tomato. I then took about 3/4 of the soup and blended it for a few seconds so there were still a few chunks of tomato. It still wasn't tomato-y enough so I also added a small can of tomato sauce - much better. I also used milk instead of cream, partially to be healthier and partially because I didn't have any cream. We like spicy stuff so I added a few drops of Chalula after serving it up. Yum!

Simple Oven Fries

So, so, so, so, so easy and equally delicious. I used garlic salt and seasoning salt instead of the cayenne, etc. My boyfriend keeps asking "are you SURE these are healthy???"
