Green Beans with Cherry Tomatoes

Wow!! Even when I modified this to make it 'healthier' it was still amazing!!! I used EVOO and no butter. I steamed the beans in a steamer basket for 10 minutes instead of submerging them in boiling water (less nutrients lost). And only used 1 cup cherry tomatoes. This is the yummiest dish. I never knew I could love green beans OR cherry tomatoes this much!

Seasoned Turkey Burgers

Deeeeelish!!! Fried them in a skillet with a little oil. A bit on the salty side but still soooo good! My hubby says these are slammin'!

Don't understand why my experience was so far short of the rave reviews this recipe got. I am pretty good at following a recipe. I give it three stars based on good healthy ingredients.

Irish Soda Bread V

Wholesome, non-sweet whole wheat soda bread. Would get 5 stars if the photo was not so misleading: 1. Photo shows a white loaf, while whole wheat flour results in a darker denser loaf - not a problem but show it like it is!! 2. Photo shows a loaf obviously baked in a loaf pan, while the recipe calls for shaping the dough into round loaves, and baking on a baking sheet. Other than that, it is a good recipe. Thank you.

Irresistible Irish Soda Bread

A good, moist Irish Soda Bread. Some notes, however: 1. The photo shows raisins in the bread - there are no raisins called for in the recipe. An inexperienced baker would not know the technique for adding raisins. 2. My bread was done in 60 minutes. The bread was moist and wonderful. 3. Additionally,it is great eaten shortly after baking, and does not need to be "wrapped in foil for several hours". Just give it a little time to cool slightly. Thanks for a good recipe!

Spicy Sweet Potato Soup

Excellent soup! Even without the lime zest it was very tasty. I used vegetable broth instead if chicken to make it vegetarian.... yum!

Harvest Rice Dish

Yum! Fine without the orange zest (didn't have any). The only concern is the amount of liquid left in the bottom of the rice after steaming; I am used to the rice soaking up the entire amount and not having to drain it. I might use less broth next time. But this was delish!

Fairly tasty; gets points for healthy ingredients. However, 1/4 cup of balsamic vinegar is way too much. Cut back to 2 Tbsp. or even less.

Good, although recipe was not clear re: whether the pepperoncini were sliced, left whole, etc. I sliced them and still found the salad needed more "oomph" so I added more. I also increased the kalamata olives and added salt.

Yum! This got gobbled up in my house. Used about 1 1/2 cups sugar instead of the full amount. Next I will also try substituting whole wheat for some of the white flour.

Marrakesh Vegetable Curry

Yum! My teenage daughter made this one evening for dinner and we had it with rice on the side. We didn't have spinach but it was fine without, and we only had half the curry powder but it was still wonderfully tasty. My dear daughter says next time we add more raisins!

Whole Wheat Blueberry Pancakes

YES! No need for white flour! They come out absolutely perfect (just needed to add a bit more milk to loosen up the batter)and were eaten straight up with no syrup! I did use 1 Tbsp. regular sugar instead of the artificial sweetener; we prefer the real stuff. Thanks for the recipe!

Peanut Butter Cookies VII

I teach high school Foods classes. I gave this recipe to 2 of my advanced kitchens to test. We followed the recipe exactly. The batches turned out identical - a slightly dry, crumbly dough which was somewhat difficult to work with,but baking up to be very tasty cookies that the students did like a lot. The edges of the baked cookies crumbled a bit. I believe I will try adding 2-3 Tbsp. of milk next time, or possibly a bit more PB (although this would alter the taste). Thanks for a good cookie recipe.
