Simple White Cake

This makes a beautiful 6" double or triple layer cake. I have filled the middle with lemon curd, raspberry jam, and today am making a coconut cake filled with haupia (Hawaiian coconut pudding). Makes a perfect little birthday cake for a small party.

Hunnybunch's Special Apple Muffins

These are perfect EXCEPT that my first batch, at 400 degrees, was dark brown and dry. Turned down to 350, next batch was wonderful. I used half brown sugar, half white. 2 cups of chopped Granny Smiths worked well. Texture of these muffins is great!

Pecan Pie Muffins

I make these often, using mini muffin tins. They are nothing to look at, but they are delicious! I follow the recipe exactly, topping each muffin with a pecan half. Use one tablespoon per muffin and don't overfill or they will have ugly tops. These freeze very well. PS: I don't bother flouring the pans, but use a good baker's spray.

There are so many variations of Finadene, this is a good one. I use fresh red Thai peppers and chopped white onion.

Roasted Brussels Sprouts

Best Brussels Sprouts ever. I drizzle with a little Balsamic vinegar. My favorite part is the crispy leaves in the bottom of the pan. Yum!

Enchilada Meatballs

These were great, with a few additions. I added fresh garlic, ancho chili powder and cumin to the mix, and topped the finished meatballs with some chopped raw onion and cotija cheese.
