The Best Lemon Bars

While it is an easy recipe to follow, my opinion is that this recipe makes too much crust for a 13"x9" pan. I agree with other reviewers that '2 lemons, juiced' is too vague for me. I guesstimated how much liquid that would be and added more. The filling tasted/felt great but was too thin for me. I like it to be at least 1/2" thick. I also might like to add some lemon zest to help the lemon flavor. This is an easy starter recipe to do some minor tweaking according to one's tastes :)

I accidentally made a nice discovery! I forgot to add the eggs and it turned out great! Mind you, I halved the sugar and used 2/3 c. oil. That made the potential batter lighter so it didn't need the eggs for volume. GREAT starter recipe for modifications.
