Pico de Gallo Chicken Quesadillas

Reviewed: Jan. 25, 2013
Although I haven't had a chance to try this recipe (I make my own salsa and we do simple quesadillas, chicken and cheese or pork and cheese because of my picky eater) I read a note about some people having trouble flipping the quesadilla. I read the plate suggestion, excellent idea that I'll have to try (if I can handle it with my clumsiness!). ;) Another way to do it is to don't use two tortillas for each quesadilla. Use one tortilla and put the filling on half of it then flip the other half over so that the quesadilla is closed. When it's ready to flip you can slide the flipper under the straight side of the quesadilla which is in the middle of the pan (making it easier to get the flipper under it) and then turn it. You can do this with two per pan if you wish because it's still easy to turn them because each has the straight side in the center of the pan so you just slide the flipper under each. :) Hope that helps!

Steak on a Stick

Reviewed: Aug. 27, 2011
This is excellent in soft tacos! I use flank steak and cut it into strips, then marinate it overnight. Then I cut it into chunks and cook/fry it in a heated grill pan to get a nice braise (is that the right word?) on the meat. I do have a problem with too much marinade going into the pan with the meat so I drain it as much as I can and then a couple times while it's cooking (it cooks really quick not counting the time needed to drain it a few times). Corn tortillas warmed in olive oil, cheese, lettuce, tomato, cilantro, salsa, YUM! :)

Red, White, and Blue Fruit Smoothie

Reviewed: Jul. 6, 2011
This is good, I love smoothies... :) I used plain yogurt and no vanilla extract. For those looking to add even more "healthy" to it, add walnuts (if not allergic to nuts) and instead of honey use (granulated like sugar) Stevia (not Truvia; use Stevia - health food stores). Also, to hull your strawberries, push a straw up through the bottom of the strawberry through the top and out. It should remove the top (or most of it) and hull your strawberry at the same time. :)

Chicken with Bouillon

Reviewed: May 8, 2011
This was great! I sprinkled each breast with garlic (not garlic salt) and seasoned pepper before putting them in the margarine/bouillon mixture. And I didn't use bouillon cubes, I used "Better than Bouillon" (lower salt) Chicken Flavor. Served with Pasta Roni Angel Hair Pasta with herbs (kids' request) and green beans. Great (and oh so incredibly easy) meal! :) Thank you!!
