About this Cook
I'm a single mother of one human child, four feathered kids, and one fur-kid. Love life, like to cook, love to eat - trying to find a balance. I work long hours and far from home, so I need help with great dinner ideas
My favorite things to cook
Let's see - chicken!!! It's versatile & easy - lol
My favorite family cooking traditions
My mother fixes Mac & Cheese from scratch for Thanksgiving and Christmas - I have started doing the same for my daughter and I and of course fixing a wonderful potato salad for a good barbeque.
My cooking tragedies
Uhhh trying to rush to cook fries on a gas stove. The oil ran over due to so much ice being on the fries, a big flame shot up, I screamed and backed up. In the end I slightly charred the cabinet that was above the oven. I got it cleaned up and painted over - (apartment living) Recently I tried to make a dump cake - tasted great - looked horrible - Still don't know what I did wrong.

Slow Cooker Taco Soup
This recipe is great, I did simplify a few things -in place of the chili beans I used one can of hominy, -cans of rotelle versus the separate cans of tomatoes and green chiles, and tomato sauce - I used mild. - ground turkey versus ground beef - I went for the Fiesta corn Da Kid, my picky teen, really liked it tonight!! This turned out to be perfect tonight since it rained and the temps will drop through the night.

Cowboy Macaroni
Well, I didn't realize I did NOT have the boxed Macaroni & Cheese, so I altered it by fixing elbow macaroni, and using Kraft American Pasteurized Cheese slices (and mixed in Shredded Sharp Cheddar Cheese). And the only can of corn I had was the Fiesta Style corn. We loved it!!!

Quick and Easy Tuna Casserole
I liked it. I modified it a bit. I mixed in shredded sharp cheddar cheese, and used a baking pan. I put the mix in the pan, placed the sliced cheese on top and then the next layer of mix. I topped it off with sliced cheese and a little bit of shredded cheese.
