Breakfast Casserole II

I made this for a brunch bday party for my daughter. It was very yummy and time-saving. Since it was for young kids, I only added a few onions and no peppers (though when I make it at home, I certainly will) as previous reviewers suggested. Also as per previous reviews, I did add the cheese right to the casserole. This took and hour and 40 minutes to cook. Be sure to drain your sausage well, my partner didn't do that for one and it seemed to take longer to cook. This is a keeper! (Be sure to add salt and pepper to your taste before cooking!) :)

Award Winning Chili

This chili was pretty good--I thought it'd have a drastically different flavor with the cumin and bacon, but it really didn't. Perhaps it depends on what sort of chili seasoning packet you use--I usually don't use a packet, so maybe next time I'll do everything the same, except flavor it as I usually do with my own homeade chili. The veggies were great and I just cut up the other halves of the peppers and diced up double of everything else and froze a ziploc with the beginnings of the next batch of chili--which was the time consuming part. I simmered mine for 3 hours, adding water when it started to look dry. Thanks though! I got me to try something different!

Dump Cake V

Wowsie has this one EASY EASY EASY and did it ever taste good! My husband made this--and it was about the 3rd thing I've EVER seen him cook! We made it with pecans since that's what we had, and ate it right out of the oven with vanilla icecream. It was excellent! And I'm not really a cherry pie person OR a coconut lover. This will be a staple--especially when I need something really quick!!

Avocado Dip II

YAAAAAAAYYYYY! Avacado dip that doesn't have a ton of onions!! We LOVED this dip--and its so easy and tastes like its not. I'm lactose intolerant so we substituted tofu sour cream and you can't tell its not the real thing. I like it because you can control the spice through your salsa. I left it chunky--just barely mashing it. THANKS SOOOO MUCH--I've been looking for a recipe like this for years. :)

Mexican Bean Pie

Oh my WOW!!!! This was fantastic! I didn't have a deep round cake pan, so I used two shallow ones and 6 tortillas (instead of 5). THIS WAS SOOOOOO GOOD! I had a vegan friend over so I substituted tofu cheese and sour cream and my husband couldn't even tell, he loved it and he's a meat eater to the core. Next time I might play around--add another jalepeno or some onions. This has become an immediate staple in our house--THANKS!

Oven Roasted Red Potatoes

Super good and super easy--just make sure to mix well before serving or else the top half is okay and the bottom is very saucy--if you mix it its GREAT and soooo easy.

Asian Tuna Patties

Chicken, Sausage and Zucchini Pasta

The recipe was pretty good--I used hot Italian sausage and so had to use a liitle bit of oil. I love garlic so I used garlic cloves and garlic salt. I also did as others suggested and used more tomato sauce. My husband LOVED it and that's saying something if you know my husband!

Easy Potato Sausage Soup

This was great--I'm always reluctant to try new recipes but this was really tasty and really easy. I only used a half onion, used about a cup of sliced fresh carrots instead of frozen, and didn't have any green pepper so I excluded that. I threw everything (I didn't saute anything) except the potato flakes and milk into the slow cooker on high for 4 hours--with enough water to cover everything, and added the milk and flakes in the last few minutes. I also used turkey kielbasa to be a bit healthier and left the skins on the potatoes--healthier and faster. IT WAS GREAT!! And it freezes well too. THANKS!
