Fresh Asparagus Soup

Very tasty, a nice combination of tangy and creamy with the asparagus. I added a clove of garlic with the onions and asparagus, which I thought added to the flavor.

Curried Butternut Squash and Pear Soup

Delicious, even though I changed it a bit (no pears, so I used homemade unsweetened apple sauce, and I doubled the ginger and curry because I like those spices!) A unique combination of flavors, also keeps well in the fridge and is just as good reheated. Will make again!

Tzatziki Sauce (Yogurt and Cucumber Dip)

Yummy! I have made similar dips before, but they tended to get runny after a little while because of the moisture from the cucumbers. The version has a much nicer consistency because the cucumbers are thoroughly drained. Only problem I have with this recipe is with the measurements - it's not clear how much of the original 16 oz of yogurt is left after draining, and since I was starting with Greek yogurt, I skipped the draining step and had to guesstimate how much to use. It came out great though - my guess is that the exact proportions are kind of a matter of taste.

Good 100% Whole Wheat Bread

The heading for this recipe says this bread isn't hard. Not sure whether that refers to the difficulty level of the recipe, or the texture of the final product, but it's true either way. I am a complete bread novice, and I don't have a bread machine, so I followed the steps outlined in the "Baking Yeast Breads" article on this site. It was very simple to do, although the hand-kneading process required adding a lot of additional flour, which may have made the bread denser than it would have been otherwise. Still, my first-ever loaf of bread came out soft, chewy, and delicious. I'm delighted1

Buried Treasure Date Bars

I love dates, but I have never cooked with them before, so I was excited to try these. I modified this so much that my rating almost doesn't apply to the recipe as written! I used half whole wheat and half all-purpose flour, 3/4 cup brown sugar and 2/3 of a large, very ripe banana (for extra moisture and flavor), 1/2 cup walnuts (didn't have enough!) and 1/4 cup milk chocolate chips. I also skipped the powdered sugar. As noted, these had to bake a lot longer than the recipe stated (about 35 minutes), and needed a much larger pan (9x13). They came out really tasty though, although almost too sweet for my taste, so I may add even less sugar next time I make them. I might even try making them as muffins.

Herbed Chicken Nuggets

Really tasty! They came out crispy on the outside, nice and tender on the inside. One little tweak that gave them a little extra crunch: I didn't have any wheat germ, so I crushed some bran flakes cereal instead. My husband and I loved them - this recipe will definitely go into the favorites book!

T's Sweet Potato Fries

Tasty! I don't think they need to bake for 30 minutes though - some of them got a little black. I read what other people said about them coming out crispier if they weren't microwaved as long, so I only put them in for two minutes. The texture was just right when they first came out of the oven. Unfortunately I had to cover them up to keep them warm while I got the rest of the dinner on the table, and they got a little soft. Still very tasty though.

Carrot Pineapple Cake I

I give this four stars instead of five not because it didn't taste good - it was great - but because I modified the recipe. I made two 9 inch rounds, stacked them with a layer of fruit preserves in between, and frosted the whole thing with cream cheese frosting. I also tweaked the recipe to make it a little lighter - 1/4 cup oil + 3/4 cup unsweetened applesauce, 1 1/4 cup sugar instead of 1 3/4 cup, and I used fat-free cream cheese and only 1 cup of powdered sugar for the frosting. I also substituted a cup of golden raisins for the coconut because my husband doesn't like coconut. Ok, so it's still not health food - but those modifications cut quite a few calories, and no one who tried it even noticed the difference!

Garlic and Herb Lamb

Easy and delicious! I made this for a family Easter get-together, and everyone loved it. I actually prepped it the night before, stuck it in the fridge, and popped it in the oven on Sunday. I also used fresh dill since I had some on hand, and I think that made it even more flavorful.

Kathy's Delicious Whole Slow Cooker Chicken

Yum! So easy, and the chicken was so moist and tender. I stuffed the bird with a couple chunks of onion and celery as well. Only problem with this was that it actually cooked a lot faster than the recipe suggested (about 3 hours on high, not four, and that was starting with a bigger bird that was partly frozen). According to my slow cooker manual, stuff cooks faster if the crock isn't at least half full, and this recipe doesn't make enough liquid to fill my cooler that much. Not really a problem with the recipe per se, but bear this in mind if your cooker is on the bigger side.

Armenian Lentils

Just ok. This recipe is a good starting point, but it needs more flavor. I added chopped bell pepper and celery as well as cumin, but it was still missing something. I will probably play with it some more and figure out what spices it needs. On the plus side, the yogurt topping is a nice touch-adds a little extra tanginess.

Whole Wheat Blueberry Pancakes

Very easy, very tasty, and healthy too. I tried some other whole wheat pancake recipes that came out very tough and rubbery, but these are nice and fluffy. These have become a staple for weekend breakfasts when my fiance and I get together to cook. We modified the recipe slightly, though- sugar instead of artificial sweetener, and start with just 1 cup of flour so you don't have to do so much guesstimating on how much milk to put in. We also add a 1/2 tsp or so of cinnamon and another of vanilla. And instead of mixing the blueberries into the batter, we drop them into the individual pancakes after we pour them into the pan. That way the berries don't sink to the bottom of the bowl and all end up in the last 2 cakes. Sometimes we drop in some crushed walnuts too. Very yummy!
