Poblano Chicken Salad

This was a fabulous and easy meal for my family! I made a few minor changes to tailor it to my familiy tastes: I used anaheim peppers (its what I had on hand) and skipped the celery. When I pureed the mayonnaise and peppers - I added 1/2 of the onion/bellpepper mix to this and blended it in as well - it added a nice extra depth to the dressing flavor. We didn't need salt or pepper. We prefer our chicken salad chunky, so I chopped up the chicken and mixed it, the remaining onion/bellpepper blend and dressing together in a large bowl and refrigerated it! We ate ours as wraps wtih lettuce, tomato an jalapeno slices!

Fluffy Pancakes

WOW! These were fabulous pancakes! We used whole wheat flour instead of white and also substituted truvia for the sugar - and they were amazing! Veryt all and fluffly. For us, and maybe it was the wheat flour, we felt 1 pancake each was sufficient- we were very full and satisfied. These are so fluffly I couldn't imagine eating more than 1 of them!

Baked Potato Soup

A fabulous comfort meal! We always keep plenty of chopped bacon and green onions on the side to garnish. We like our potatoes a bit more firm than mushy- so I boil them to tender crisp and then procede with the rest of the recipe. With plenty of cream and cheese the sauce thickens nicely and the potatoes can remain more chunky.

Guinness® Corned Beef

I cooked this for my very Irish father on his birthday (which happens to be St Paddys day!) and was over the moon! It brought fond memories of his mother and in true Irish fashion led to a lot of storytelling and lies! We did add chunks of potato, carrots and onions for the last hour of cooking and cabbage for the 30 minutes. Everyone used crusty rolls to soak up extra juice on their plates. This was fabhulous! Thanks for a great recipe that led to a great family night!

Crescent Bacon-Cheddar Pinwheels

These were a fun alternative to traditional dinner rolls- and were a huge hit. I used cream cheese and real bacon pieces for the filling- and in about 1/2 of them added green onions as well. Not an overly strong flavor of bacon, cheese or green onions- just a nice touch of each to make them yummy!

Enchiladas Suizas

Fabulous!!! We made this for a non-traditional Christmas dinner and had no leftovers! And I have had many requests since to make them again. I did saute 1 cup of onions, bell peppers and mushrooms to add to the chicken and cheese filling since my family eats more vegetables than meat-- but that is the only thing I changed! This recipe is a winner!

Rich and Simple French Onion Soup

This is a great base for French Onion Soup! Like others, I recommend you carmelize your onions for a richer extra flavor. I also substituted a good dry red wine for the sherry and would recommend that as well. Finally, my family loves onions and so we added an 2 cups of onions since this soup was very thin without them. Overall, a great soup and well worth trying and adding your own touches to!

Vegetarian Tortilla Soup

This was a fabulous soup! I did add a can of black beans (well rinsed) for protein- and it was great. my husband had never had tortilla soup and my parents are very big meat eaters-- and this soup satisfied everyone when I cooked it for a family night dinner! I heavily recommend you try it.

Delicious Egg Salad for Sandwiches

This was my first egg salad to ever make and it turned out pretty well. I agree that is really a good base salad- but you need to add more to it for crunch and color. Overall we enjoyed it and will likely use it again as a base.

Cream Cheese Penguins

Kids and adulta both loved these at my last party. These were very easy and inexpensive to make which is always a plus! Even if not everyone likes black olives or cream cheese- they will love the look of these penguins!

Easy Alfredo Sauce I

We have been using this recipe for about 8 years now- and it is a great basic alfredo sauce. To help keep a smooth texture I have found it best to use fresh parmesan and not the grated kind in a jar. Also, if you had it slowly to the cream it will melt as you stir it in and help keep the texture smooth. We alos make sure we melt it on a low tempature in order to avoid scalding or over cooking it (which will also make it lumpy). FInally- go nuts with seasonings - make it different! Sometimes we add Cajun seasoning to make more of a creole alfredo, sometimes we use heavy garlic - tweak it to whatever you want the dish to be- this is a great base- make it yous!
