Chef John's Salmon Cakes
I love salmon cakes. I think this is the best I've ever had. I think without the capers it would have needed a little onion and dill. I was skeptical about the 1/2 tsp of cayenne, but I followed the recipe, and it was great. Thank you, thank you, thank you Chef John. Once again you've hit it out of the park.

Ninety Minute Cinnamon Rolls
I have made oodles of cinnamon rolls over many years. These will be THE recipe forever now. I made them in a 9 x 13 pan because of all the warnings about the filling spilling out. I did add some fresh nutmeg to the filling, about a half tsp. Next time I may add a whole tsp. I made them the evening before I wanted to serve them and put them in the fridge overnight. Let them sit out about an hour before baking them. Oh, and I let them rise the first time about an hour instead of the 10 minutes. That was because the yeast I used said "rapid rise, active dry yeast" instead of "instant" on the pkg. I wanted to make sure it was fully hydrated. These were fabulous.

Microwave Bread and Butter Pickles
I've never made pickles before, THESE ARE GREAT. I decided to make them because they don't make a tremendous amount and it doesn't take that much time. Made 2 1/2 pints. It makes me crazy when a recipe doesn't give better measurements than 1 cucumber and 1 onion. I used several small cucumbers ( weighed about 2.5 lbs) and one vidallia onion (weighed about a half lb). Cucumbers are much heavier because of the amout of water they contain. I was concerned because the only liquid added was vinegar. But the liquid in the cucumbers makes it enough liquid to fill the jars just right. I'll be doing these again.
