Orzo with Parmesan and Basil

I used less butter. Threw in some chicken sausage and peas and just sprinkled in some dried basil since I didn't have any fresh. Yummy!

Spicy Bean Salsa

This is sooooo good! I left out the black-eyed peas, used frozen corn instead of canned and only used 1/2 cup dressing. I also added a little cumin and cilantro.. YUM! I will be making this again!

Peach Pie

This was my first peach pie and it turned out great! I added a little cinnamon to the mix and as another reviewer did, I tossed the peaches with the flour and sugar and dotted the butter over the top. I also left the pie in the oven to cool and set-up and that worked too! great recipe.

Luscious Apple Trifle

This was wonderful. I tossed the apples with a little lemon juice so they wouldn't brown and used pound cake instead of angel food as another reviewer did. Turned out perfect.

Thai Pork with Peanut Sauce

This is definitly a keeper. I didn't have any coconut milk, so I used regular milk and a little cream of coconut instead. yum. my 3 year old liked it too.

Crab Brunch Casserole

This was great. I used 4 eggs instead of 2, and an extra can of crab just to make it a little bigger. It came out perfect and my dad and father-in-law who never go back for seconds did. It was a wonderful Christmas brunch dish.

Green Grape Salad

This was really good. I don't like pecans, so I used slivered almonds instead. I toasted them in a skillet and added the brown sugar while I was doing that. Yum. My husband would have prefered the nuts on the side. I'll be making this again.

Double Chocolate Mocha Trifle

This is super easy and absolutely wonderful. I bought the brownie bites and cut them up even smaller. Instead of one big bowl I made individual parfaits. YUM!

Marinated Pork Strips

This was pretty good. I only marinated it about 1 hour and it was still very tasty. I'm not sure the sesame seeds added that much. It seemed like there were a lot of them though. Will make this again.

Poppy Seed Chicken

this was really fantastic served over white rice. i added a little garlic and chilie powder when i cooked the chicken to spice it up a bit. then used half the sour cream and butter called for to reduce fat. yum

Burgundy Pork Tenderloin

This was so simple and extreemly tastey! i used less wine than the recipie called for and added a tablespoon of corn starch at the end to thicken the gravy a bit. i'm fixing this the next time we have company...yum!

Toffee Chunk Cheesecake

this was the most incredible cheesecake i've ever made. to cut back on prep time i bought the heath bar toffee chips (near the chocolate chips in the store.) it even impressed my mother-in-law who taught me how to make cheesecakes..she asked for the recipe right away. thanks
