Mexican Wedding Cake

Oh my, what a winner! This is simple and really good, the best combination for a recipe! Excellent choice for novice bakers. I used walnuts and put them in the cake batter, along with some coconut. I added even more coconut to the sauce (you can't really call it frosting), as well.

Cinnamon Bread Delight

Awesome recipe! Turned out great and a big hit with most. I might reduce the cinnamon by maybe a half teaspoon because it was a little too spicy for some.

Chewy Sugar Cookies

I used this for fruit pizza so I didn't make cookies but nonetheless, it was a great recipe. I will be using it from now on for sugar cookies. The dough was a little sticky for rolling out but a little extra flour solved that.

Microwave Oven Peanut Brittle

I make this for my stepfather, as peanut brittle is his favorite candy. He says it's the best he's ever had and believe me, he's eaten a lot. It is super easy to make. One bowl, one pan. Clean up is a snap as well, as long as you soak the bowl a bit in hot water.

Dump Cake III

Very nice and earns what I call the "Nelly award"...my term for recipes both extremely delicious and extremely easy in honor of a dear lady whose cooking talents are second to none. I didn't use apple pie filling as I didn't have any (and don't really care for the canned variety) so I used a can of pineapple with a couple hefty tablespoons of apple jelly, then added a half cup or so of coconut and subbed vanilla for cinnamon. What surprised me was that it was almost universally well liked. I thought it would appeal more to a select few with the changes I made. Go figure.

Slow Cooker Chicken Stroganoff

This is my daughter's favorite! I like to start with partly frozen chicken because it is easier to cut and it seems to do better in the crock pot. You get a different texture if you cook it on low all day as opposed to on high for a couple of hours. Either way it is good!

Chinese Napa Cabbage Salad

I loved this salad but don't like the fact you can't keep the leftovers. The noodles get pretty gross after only a short time. For a crowd, it's a winner though!!

Bacon Cheese Puffs

Oh, I simply loved these. So good I didn't care about the unhealthy factor. I think they would be good with rye bread as well. I made a very small batch and it went a long way. The mix kept in the fridge very nicely. I will serve these at my next party.

Black Walnut Cake

This cake is simply outstanding. I put in a full cup of chopped black walnuts (because I love them) and added a simple maple flavored glaze while it was still warm. Even if you don't like black walnuts, the basic recipe is still a winner. Unbelievably tender crumb, slightly crispy crust...it's just what I like in a pound cake. I will make this again and again, experimenting with different flavors.

Green Bean Bundles

I love these and have served them to people who don't like green beans...and they love it!! The bundles make the best presentation but I've also saved on time by crumbling the bacon over the beans and dumping it all in a 9x13 dish.

Very good. A tad floury in taste but I'm pretty sure that was my fault for not measuring exactly right. I will definately be making again. I think I'll experiment with a little extra sugar as well.

Crisp Pickled Green Beans

Anniversary Chicken I

Yummy!!! My husband loved it too and that doesn't happen often. I used real bacon (I just cook a bit extra on weekend mornings to use), forgot the parsley and it was just awesome.

Baklava

Excellent and easy recipe. I did think that the sauce was a little too much (volume) but the longer it sat, the better (and less messy) it got. I think this may have been my fault because I didn't boil it quite long enough. Warning: this stuff is too good to have around when you are on a diet!!

Spinach Dip With Cajun Pita Chips

Oh, I love this. Great way to get a dark green veggie in your diet. I didn't make the pita chips (yet!) because I'm lazy and decided to put the cajun spice in the dip itself. I used tortilla chips instead and it is wonderful!!!
