Chewy Sugar Cookies

I used this for fruit pizza so I didn't make cookies but nonetheless, it was a great recipe. I will be using it from now on for sugar cookies. The dough was a little sticky for rolling out but a little extra flour solved that.

Key Lime Cheesecake I

I really liked this but the flavor was just a tad too sharp at first. Definately mellowed after a couple of days in the fridge and then I thought it was just right. Others didn't care for it as much....said it was like key lime pie but not quite as good.

Irish Cream Bundt Cake

This is just fantasic. I leave the cake in the pan and pour the glaze over it while still hot. Let it cool a bit, then invert directly to a plate or cake pan. It's easier and less messy.

Funky Frito Fruckies

Broccoli and Cheese Brunch Casserole

I made this for supper last night. It is wonderful! I modified the recipe some though. I browned the meat, added some onions and let them cook a bit. Then added fresh broccoli, (I used the food processor to cut both veggies, easy!) after the meat mixture cooled a bit, along with the cheese. I didn't have ricotta cheese, so I used sour cream and mozzerella instead. Skipped the milk. I didn't have a tomato and that's too bad, would have been even better. My boyfriend thinks mushrooms would be a good addition too.

Baklava

Excellent and easy recipe. I did think that the sauce was a little too much (volume) but the longer it sat, the better (and less messy) it got. I think this may have been my fault because I didn't boil it quite long enough. Warning: this stuff is too good to have around when you are on a diet!!

Mexican Salad

Mmm, mmm good! I had to make substitutions since I made this at the spur of the moment and had to use what was handy! I subbed a can of pintos for garbanzo beans, a can of diced tomatoes with chiles instead of fresh, and basil for the cilantro. Less oil and more lime juice, just as a personal preference. I have a girlfriend who makes something similar, only with Italian dressing and this beats hers...no contest.

Chicken Breast Stuffed with Spinach Blue Cheese and Bacon

I really liked this but I had to improvise after realizing the chicken I thawed was tenderloins, not breasts. I had planned to serve it alongside pasta in a lemon cream sauce. So I seasoned the chicken with Old Bay, browned it in the bacon fat, then put it to the cream sauce along with the bacon, spinach and cheese. Also, I added some chopped artichoke hearts. It was delish!!

Sausage Applesauce Appetizer

This was great....different but very interesting flavors. I would make again. I did cut down on the sugar and used no sugar added applesauce, just as a personal preference.

Tortilla Pinwheels

I skipped the olives and used flavored tortillas (spinach and sun dried tomatoes). I liked them OK but I think I used too much ham for my tastes. Other people really liked them so I'm giving it a four.

Potato Rosemary Rolls

I loved these! Easy and beautiful. I used fresh rosemary out of my garden, a little more than called for. I've made them several times for large groups and they are a great hit.

Fruit Cocktail Cake

This was good. I used the lite fruit cocktail (with juice instead of syrup) and I still thought it was too sweet. Also, I think it would work much better with plain peaches or pineapple. It is almost a cobbler. I would make this in the winter when fresh fruit isn't readily available by all means.

Chinese Napa Cabbage Salad

I loved this salad but don't like the fact you can't keep the leftovers. The noodles get pretty gross after only a short time. For a crowd, it's a winner though!!

Green Bean Bundles

I love these and have served them to people who don't like green beans...and they love it!! The bundles make the best presentation but I've also saved on time by crumbling the bacon over the beans and dumping it all in a 9x13 dish.
