Chicken Tikka Masala

The marinade is very delicious and the chicken ended up so tender. The chicken really tasted like the chicken I have had in my chicken tikka masala at restaurants (dallas, cincinatti, shreveport,etc.) But the sauce was not anything like chicken tikka masala I have had at many Indian food restaurants. It wasn't bad though. Chicken tikka masala I have had and what I was shooting for was much lighter and sweeter. I added a bit of sugar and added some additional heavy whipping cream to cut down on how spicy it was (not hot, but just overpowering spice flavor) I think it's the paprika that might be throwing it off. Anyhow it was still good enough for me to tinker with the sauce and see if I can get it tasting more to my family's liking. But the marinade, 5 stars! I also cut salt in half for both marinade and sauce as per many reviews abd thought it was perfectly salted. I am still surprised at all the reviews about it tasting like authentic Indian chicken tikka masala.

Pecan Pie

Made this for a church activity last night where everyone brought pie. People were excited to see a pecan pie in the mix and everyone who had a slice said it was wonderful. Pecan pie isn't one of my usual choices but I had a slice this morning for breakfast. Very tasty! I used half pecans and added about 1/2 cup more since they weren't chopped. I also cooked for 5 minutes more than the max time. Once it cooled it was the perfect consistency, just a little runny.

Fluffy Pancakes

Very delicious! They were super super fluffy and tasted great. Make sure you cook them at medium or medium low because since they are so thick they need extra time at a lower setting to cook all the way through. Followed the recipe exactly. Some of my family ate them with berries on top with cream and some of us with butter and syrup. Either way super tasty. After you mix them (do not over stir) don't mix again as you make them so they stay fluffly.

Slow Cooker Taco Soup

I followed the original recipe, all the stated ingredients and amounts. All I added in addition was about 1 tsp chilli powder, 1 tsp cumin, and salt to taste. I did drain and rinse both cans of beans. Many people stated they didn't add the water. I guess if you want more of a stew that's fine, but I added the 2 cups of water and thought it was the perfect consistency. Dollop of sourcream and some shreaded cheese on top it was yummy! Kids ate it with fritos. Also made some cornbread to go with it. I simmered on low in 6 quart crock pot about 7 hours. Next time I think I may substitute the chilli beans with garbanzo. Great recipe! Will be making this lots. Thanks Janeen!

Chicken and Dumplings III

Great base. I add peas and carrots like many others have said. I made dumplings from scratch one time and noone in my fam liked it as much as using the canned bisquits! I agree to I prefer the bisquits. Super easy yet homemade tasting.

Chicken Massaman Curry

I love this recipe although I altered it quite a bit over time. I normally double the recipe, substitute the fish sauce with worchestershire sauce, and make my own tamarind paste (puree dried apricots, prunes, and dried dates with enough lemon juice to make a thick paste- I end up putting about a cup of this in there). I also use sweet potato instead of white and put some onions slices in it after the potatos have gotten less firm, maybe when there's about 15 minutes left. Also I add yellow curry (about 2 tablespoons) at this point as well. i also add a little more peanut butter than it calls for and usually have to add a half can extra coconut milk. Love it!

Texas Pork Ribs

I made the rub exactly as indicated except I used coarse kosher salt instead of regular salt. I had 7 pounds of pork ribs. I had more than half of the rub left over, so next time I will cut rub recipe in half. I baked them covered in foil in oven at indicated temp for 4 hours for desired tenderness. I used store-bought honey barbeque sauce since I didn't have that much ketchup on hand. I didn't grill outside, just put sauce on and put them back in oven uncovered for 45 minutes at 325. Holy cow are these great! Everybody loved them! My daughter who doesn't like barbeque sauce ate some of the ribs I didn't put sauce on and loved them too! Came out perfectly tender and wonderful flavor, great recipe!

Mardi Gras King Cake

Just made this and it was delicious! I made one with the cinamon and sugar filling but added the cream cheese filling that was suggested in another review. In the other I put the cream cheese filling and a strawberry filling. I also prepared the dough in my breadmaker and it turned out perfect. I did let it rise in a bowl though cause I knew my breadmaker wouldn't be big enough. In fact I had to help it mix a little bit since there was a lot of dough in there and it had trouble mixing the top portion, but it kneaded fine. I did not add the nuts and raisins because those are not typical king cake ingredients. I'm a Louisianian so I am even more impressed with this recipe because I have had many, many king cakes and this is the best one I have had and my hubby agreed! I also cooked it at 350 for about 20 minutes as well.
