Chicken Tikka Masala
The marinade is very delicious and the chicken ended up so tender. The chicken really tasted like the chicken I have had in my chicken tikka masala at restaurants (dallas, cincinatti, shreveport,etc.) But the sauce was not anything like chicken tikka masala I have had at many Indian food restaurants. It wasn't bad though. Chicken tikka masala I have had and what I was shooting for was much lighter and sweeter. I added a bit of sugar and added some additional heavy whipping cream to cut down on how spicy it was (not hot, but just overpowering spice flavor) I think it's the paprika that might be throwing it off. Anyhow it was still good enough for me to tinker with the sauce and see if I can get it tasting more to my family's liking. But the marinade, 5 stars! I also cut salt in half for both marinade and sauce as per many reviews abd thought it was perfectly salted. I am still surprised at all the reviews about it tasting like authentic Indian chicken tikka masala.

Pecan Pie
Made this for a church activity last night where everyone brought pie. People were excited to see a pecan pie in the mix and everyone who had a slice said it was wonderful. Pecan pie isn't one of my usual choices but I had a slice this morning for breakfast. Very tasty! I used half pecans and added about 1/2 cup more since they weren't chopped. I also cooked for 5 minutes more than the max time. Once it cooled it was the perfect consistency, just a little runny.

Fluffy Pancakes
Very delicious! They were super super fluffy and tasted great. Make sure you cook them at medium or medium low because since they are so thick they need extra time at a lower setting to cook all the way through. Followed the recipe exactly. Some of my family ate them with berries on top with cream and some of us with butter and syrup. Either way super tasty. After you mix them (do not over stir) don't mix again as you make them so they stay fluffly.
