Make Ahead French Toast

Reviewed: May 22, 2006
FIVE STARS is not enough!! This tasted so great...tasted kind of like a cinnamon roll. Course, I sprinkled on some cinnamon after dipping bread... I used 4 eggs, 1 c milk and 1 cup half and half with the vanilla and had just enough to soak about 1 lb of bread quite well. I made it at about 10:00 AM, and started cooking about 5:30 the same night...it was great!!! I served with some home fries (pan fried round potatoes) and milk for the kiddos. EVERYONE LOVED IT!!! Can't say enough good about this recipe!! Easy and tasty! Thanks

Excellent Oatmeal Cookies

Reviewed: May 20, 2006
Good taste, but flat. I followed the recipe except left out the cinnamon and nuts, incread flour by 1/2 cup, increased soda to 1 tsp and only put in 2 1/2 C oats. Also cooked with 1/2 margarine 1/2 butter to hopefully not have them spread as much. Also chilled well and still spread. A good tasting cookie, but not the best in appearance.

Garlic Red Potatoes

Reviewed: May 19, 2006
Very good and different, nice and salty and the lemon adds a different flavor. I didn't have fresh lemon so I added about 1 1/4 to 1 1/2 tsp lemon juice and they came out great! Par-boiled first so they'd cook faster and then ended up broiling at the end just to get them to brown and crisp up faster...potatoes always take forever in the oven when they are raw...best to either par boil or microwave to soften first, then crisp up in oven. Love this new recipe to my standard menu of sides!

Cheesecake Topped Brownies

Reviewed: Aug. 11, 2005
FIVE STARS IS NOT ENOUGH! You must try this recipe. I did not have any problems at all with this. I used a Fudge brownie mix from Duncan Hines, followed the cheesecake recipe exactly, except added 1 tsp lemon juice for some tang (oh yes, and low fat cr. cheese) and made my own fudge frosting with 2/3 C unsweetened cocoa pwdr, 3 C pwdr sugar 1 tsp vanilla and enough milk (anout 1/3 C) to make it easy to spread. Got ABSOLUTE rave reviews. I would not double the cheesecake, it is roughly the same amt as the brownie. Oh yes, and I would recommend less cooking time, mine only took about 30 minutes. You'll love this one!

Easiest Teriyaki Marinade Ever

Reviewed: Aug. 3, 2005
SUPERB!! I used this on boneless center-cut pork chops and added a little lemon juice and a couple dashes of pepper, as others suggested. Marinated for 6+ hrs and threw them on the grill. Simply outstanding. Keep the cinnamon, it makes them different! Try this!

J.P.'s Big Daddy Biscuits

Reviewed: Aug. 3, 2005
Very good. Used buttermilk instead of milk and margarine not shortening. There was just a touch of a strange flavor....maybe from the baking powder or the buttermilk? Next time I'll try just milk and see what happens. I let them sit once I cut them and still did not end up with HUGE biscuits, but they were still quite good, and I will make them again!

Chicken and Bacon Shish Kabobs

Reviewed: Aug. 2, 2005
Thought these were very good, although I should have left out the mushrooms, since we really don't like mushrooms. I marinated overnight and all of the next day to make sure it sat long enough. I did double the marinade, which I would recommend. Bacon takes some time to cook all the way on the grill. Would recommend cooking veggies and pineapple separate from meat to ensure the cooking rates are the same, i.e. the meat takes longer than veggies. I also added red onions, which my husband raved about. Thanks for the great recipe.

Fajita Marinade I

Reviewed: Aug. 2, 2005
If I could give this 2.5 stars, I would. It's okay. I marinated overnight and then all of the next day and it just seemed like it wasn't anything special. Did not have a strong flavor. I used Top Sirloin beef which I expected to be great, but I was a little disappointed. Thanks anyway!

Roast Sticky Chicken-Rotisserie Style

Reviewed: Jun. 18, 2005
Wonderful. The best part is that there is no oil or butter added to the rub. I followed the recipe exactly (only I halved it to make only one chicken) except that after the chicken sat all night, I took 3 of the onion quarters out so that it would not be too strong. Might leave one more quarter in next time. Oh and I left out the cayenne pepper...too spicy. Did not baste it, may do it once or twice next time. Had plenty of drippings to use for gravy. Served with mashed red skinned potatoes and green beans. A COMPLETE SUCCESS!

Grilled Lemon Herb Pork Chops

Reviewed: Jun. 16, 2005
Simply wonderful!! Marinated all day 3 chops. Would recommend the full marinade recipe for only 3 chops or double the marinade for 6. These were the best pork chops I've ever made. They were moist, tender and tangy. Will make again and again.

Bran Muffins a la Brian

Reviewed: Jun. 16, 2005
Simply delicious. I chose this recipe over the "Classic Bran Muffins" because this one had a little more sugar and molasses that I thought would make a sweeter muffin. I was right. This has the right amt of sweetness. The other recipe would not have enough. Also, left out raisins, don't like them. Overall, moist and wonderful.

Pita Chips

A good way to save money on those expensive Pita Chips at the store. But the store ones are still better. I had a hard time "brushing on" the olive oil mixture.

Cinnamon Chip Applesauce Coffeecake

Reviewed: Jun. 6, 2005
If I could give this 2.5 stars, I would. It took me longer than 35 minutes to bake, about 45 minutes. Don't know why. I did not glaze it, just ate plain. I like the cinnamon chips a lot, but the cake is just okay. It's pretty moist, but it's just not a 5 star recipe.

Banana Banana Bread

Reviewed: May 31, 2005
A good banana bread. Not a 5 star recipe, but still good. It took me about and hour and 15 minutes to cook, possibly because I added about a tsp of vanilla to the batter. It does produce a darker loaf, as others have said, and initially was a little bit rubbery on the outside. I stirred the batter just until moist, so it should not have been rubbery, but who knows. The bread is better the second day when it has set up. Also, I used 6 bananas, 4 large and 2 medium sized, which was just a little more than the 2 1/3 required cups. I think I prefer the banana crumb muffins from this site more than this bread. However, this is moist and dense, which is good if that's what you're looking for.

Orange Honey Garlic Chicken

Reviewed: May 25, 2005
This marinade was good. It was not a 5 star, but still good. It is simple to make and similar to a sweet and sour chicken or any other type of teriyaki/soy marinade. I'll make it again though, because it was so easy and was just different enough to make making it worthwhile.

Banana Crumb Muffins

Reviewed: Apr. 27, 2005
Simply outstanding! Moist and flavorful. I used dairy free margarine (some are not dariy free, but the one I used was) for both the muffins and topping and we loved them. This made 12 large muffins for me. Two of the bananas I used were the overripe kind and one was fresh. I found it to be enough banana flavor. Also, the topping was superb!! I disagree with others who said the flavor did not go well with the muffins. It did and it was just the right amount. The only thing I may add next time is some vanilla to the batter. Oh, and I also added about a tsp of rolled oats to the topping. A nice addition, but not absolutley necessary. TRY THESE.

Fudgy Brownies I

Reviewed: Apr. 22, 2005
Very good!! The best thing about these is that they are dairy free!!! I cant have dairy products and these don't require butter or margarine which both contain dairy. I sifted the cocoa and soda as another suggested and also added the salt and vanilla right to the batter instead of w/flour. These are fudgey and moist and great. Highly recommend.

Buttermilk Pancakes II

Reviewed: Mar. 25, 2005
Great pancakes. Not overly sweet, since you only use 3 T of sugar, which is nice since syrup is so sweet. These pancakes are a little spongy, and they taste more like restaurant pancakes than most I've tried. I topped some with syrup and some with strawberries and both were great. Also, they re-heat well in the toaster oven. Try these, you won't be disappointed.
