A good banana bread. Not a 5 star recipe, but still good. It took me about and hour and 15 minutes to cook, possibly because I added about a tsp of vanilla to the batter. It does produce a darker loaf, as others have said, and initially was a little bit rubbery on the outside. I stirred the batter just until moist, so it should not have been rubbery, but who knows. The bread is better the second day when it has set up. Also, I used 6 bananas, 4 large and 2 medium sized, which was just a little more than the 2 1/3 required cups. I think I prefer the banana crumb muffins from this site more than this bread. However, this is moist and dense, which is good if that's what you're looking for.
