Stupid Simple Roast Chicken
I am absolutely "special" when it comes to whole chickens. Used this recipe 1st time and chicken was awesome. I stuffed it with onions and garlic like my mom would the TG turkey, patted the chicken with a paper towel to decrease water, slathered it with butter, tied up the legs/wings, seasoned it with: salt, pepper, garlic powder (nothing special), popped it in the oven with a digital thermometer (180). Chicken was moist and yummy. I think I might stop buying chicken from the store (unless I'm in a pinch for time).

Quick Pasta Sauce
Made this tonight because I ran out of Prego for my lasagna. The most sensitive child noticed a difference but she said it was a good one. I only modified it to make it smell like what I wanted to taste. I added 2tsp sugar and oregano based on what I wanted to taste. I only had powdered basil so I added 1/4tsp to 1/2tsp. Again, it was based on smell. In the end I added graded parm to the sauce after it mixed it in w/the meat. This was a very good quick sauce base.

Cranberry Sauce I
Perfect recipe! I read the other reviews and decided to add 1/4 tsp cinnamon and 1/8 tsp nutmeg. I'm not big on nutmeg so I went with half of what everybody else said. I don't like cranberries so my daughter (a high school culinary student) reviewed the end results. She said: "The cinnamon stands out but not over-kill. Its tart, tangy, and not too sweet, but I like sweet stuff. The cranberries gives it a great texture instead of the can version that just mushes in your mouth. There is a great after taste too. All the flavors came together in perfect harmony."
