Hot Artichoke and Spinach Dip II

I made this for my new years party and it went over fantastically. I kinda regret not doubling it because it was gone so quickly. I made a couple of small changes. I didn't use garlic salt and I put the mozzarella cheese in the mix. I sprinkled a little extra mozzarella over the top to brown. This recipe is definitely going in my recipe box for future use.

Super-Simple, Super-Spicy Mongolian Beef

This recipe was great. I halfed the amount of red pepper flakes as one of my dinner guests is not a big fan of spicy foods. That made it just mild enough for her to eat and spicy enough for us to have a little bit of heat. We did this in a bit of a hurry, so I wasn't able to marinate for a full hour. I sped things up by coating the meat well with the marinade and running it through my vacuum marinator. Served this over some home made fried rice and it was great. I made a double portion and all of it was gone. Will definitely have to make this again.

Hoisin-Ginger Beef Skewers

This recipe is fantastic. Probably the best Asian style marinade I've ever had. I've made this twice so far, and both times turn out great. The only change I made the second time around was I cut back on the lime juice just a little bit to 1 1/2 tablespoons because the first time it stood out a little more than I wanted. I made this with 3 pounds of flank steak, cut into strips. Make sure you cut across the grain. I took the strips and made double the marinade, placed it cold in a vacuum marinator. I ran it a full marinate cycle, then transferred it to a sealed container and let is sit for 12 hours. This recipe makes a fantastic appetizer. It's a little involved to prep, but that can be done well in advance of company being over, then just throw these on the grill for 3-4 minutes a side, and your done. Thanks for this great recipe!

Awesome Slow Cooker Pot Roast

I accidentally forgot to premix the ingredients before adding them to the slow cooker, but no worries, it still turned out great. I didn't bother with searing the roast, and it turned out great. I had some friends over and they all really enjoyed it. The gravy was especially good. I wish I had made some mashed potatoes to go as a side, because the gravy would have been wonderful on it.

Mouth-Watering Stuffed Mushrooms

These turned out great. The recipe doubled just perfectly. The cayenne pepper was a great addition. It gives them just a little kick at the end without making them overly spicy.
