Veggie Fajitas

I didn't have lemon pepper when I made this, so it was missing that extra kick. It was a very good and healthy change from steak fajitas for my family. When I make it next time, I'll add the pepper to make it 5 stars.

Sweet Potato Casserole II

Make Ahead Lunch Wraps

Very good! Great when I don't feel like cooking and a lot healthier than packaged TV dinners. I usally takes me 4 min on defrost to heat up in microwave. I usually use 1/2 the amount of cheese to make them healtier. You will need more than 16 tortillas! I get 30 to be safe.

Mango Cashew Salad

Really Good. Next time, I would cut the mango cubes as small as the apples, and instead of balsamic viniger, I would use sugar and water. It gets really good when you let it sit so the cinnomin softens

Addictive Sweet Potato Burritos

Not good at all! I made these and they took 2 hours! Tasted really bad, sweet and spicy do not go together. Plus, it made way to much. Just ask my freezer.

Broccoli Potato Bake

Very good "comfort food" I used 1/3 less fat cream cheese. Next time I would steam fresh broccoli insead of using frozen broccoli.

Easy Vegetable Pot Pie

Delish! This was so easy to make and it tasted great! It's best when you let it cool for a while. Don't use freshlly ground pepper; it over powers the thyme.

Honey Wheat Bread III

I was very dissapointed with this bread. I kept it in the oven more than it was supposed to be in there (1 hour and 30 min) and it was still soggy inside. Would not make it again.

Mexican Bean Pie

This is really good. I made this for my Mom and my really picky sister. Both of them loved it. The filling can also be used for burritos. I had enough filling to do two pie tins. Also, try and look for 9 inch tortillas so they fit perfectly in the pan. This save a lot of time cutting the tortillas to fit the pan.

Annie's Fruit Salsa and Cinnamon Chips

I love this recipie! It gets really good if you let it sit overnight in the fridge as opposed to 15 min. Then all the juices blend together and become stronger. I ran out of chips, so make extra. I used cherry preserves. I made it for my Dad and step-mom and they loved it. My Dad says it's good on pork chops, but I didn't try it that way.
