Creamed Cucumber Slices

This was good but, I thought, a little bland. It might be better with Miracle Whip or maybe red wine vinegar. I thought it needed a little tang to the taste. Maybe I'm just used to dill with my cucumber sauce. I guess you could try that too!

Southern Fried Green Beans

These were delicious and so easy! I didn't have any bacon but I did have the pre-made bacon pieces and they worked just fine. You could add garlic and onions or whatever you wanted to this. Thanks for an easy solution to boring old green beans!

Creamy Chicken Enchiladas Verde

The only reason I am not giving 5 stars is because I used ground turkey instead of shredded chicken. This was very simple and very good. I browned the ground turkey with the onion and minced garlic. I also seasoned the meat with a little salt and pepper while it was cooking. I also just used mild salsa. Everything else I did as the recipe said. I had a little of the meat/salsa mix left so I just sprinkled it over the top with the salsa/sour cream mix and cheese. The whole family really liked it!

Potato Chip Chicken

This was very tasty. I followed the advice of others and added parmesan to the mayo and garlic powder to the crumb mixture. I also baked it at 400 degrees for 25 minutes total, turning it over halfway through to cook both sides. Mine did not turn out crispy, but it was tasty anyway.

Potato Chip Chicken Casserole

I have been making this recipe from this site for years and just realized that I never reviewed it! I made this originally because of my daughter who loves potato chips. I use low fat cream of chicken soup and Helman's mayonnaise and I usually skip the water chestnuts and the celery. I did used to put in the water chestnuts but they really only add crunch to the dish. I didn't notice any difference without them so I just leave them out now. Tasty and good comfort food but lots of calories!

Banana Nut Bread

This was delicious! I followed the advice of others' and used 2 eggs and 3 bananas as well as 1 tsp. of vanilla and 1/2 tsp. cinnamon. It tasted like banana bread to me and was moist. I didn't have pecans so I used chopped almonds which were just as tasty. It does have a tendency to crumble like cake which makes it a little hard to spread butter on it!

Slow Cooker Turkey Breast

I followed the recipe exactly except I did take the advice of others and add a little water to the bottom of the crock pot to keep my turkey from drying out. Nice, simple meal with leftovers for sandwiches!
