Apple Strudel Muffins

Reviewed: Sep. 3, 2011
Even after adding a teaspoon of cinnamon and a dash of nutmeg to the muffins, they seemed a little bland. I think next time I'll add more cinnamon and nutmeg, as well as substitute oil for some of the butter to make it more moist and less dense.

Poppy Seed Lemon Loaves

Reviewed: Aug. 11, 2011
I added the zest and juice from a whole lemon and I could still barely taste the lemon flavor. The wet batter was super lemony, but it definitely baked off. Next time, I'll add more zest and juice to up the lemon flavor. A great base recipe, though!

Roasted Chicken with Risotto and Caramelized Onions

Reviewed: Jul. 24, 2011
This was really good, but I felt like it was missing something. Maybe roasted tomatoes or zucchini? I'm still not sure. Regardless, I'm sure I'll make this again, minus the balsamic vinegar (I didn't think it really meshed with the rest of the recipe).

Swedish Cinnamon Twists

Reviewed: Jul. 23, 2011
These tasted great, but were a bit difficult to work with. I had to add additional flour to form an actual dough instead of a sticky mess, but that made the dough difficult to roll out thin enough. Then, they untwisted themselves some while rising, so the presentation wasn't as nice as I would have liked. I like this idea, but I think next time I'll find another dough recipe that's easier to work with.

Red Velvet Cake I

Reviewed: Jun. 30, 2011
Edible, but I wouldn't serve it to anyone. I'm really disappointed with this recipe; the cake turned out too tangy and was falling apart on the plate. My husband said it tasted like play-doh. I won't be making this cake again. However, the icing turned out wonderfully.

Hester's Red Velvet Cake Icing

Reviewed: Jun. 30, 2011
I fully expected to not like this recipe. It just seemed odd to me, but I kept hearing great things about it so I decided to give it a shot. It is fantastic! Incredibly light, smooth, and delicious. Thanks for opening my eyes!

Bourbon Pecan Chicken

Reviewed: Jun. 23, 2011
This is a really unique taste that keeps you interested. I had to make some substitutions since I didn't have all the ingredients: 1T+1t vanilla extract for bourbon, and I left out the Worcestershire sauce. I also pounded the chicken breasts before cooking to ensure they cooked evenly. I think next time I would add a smidge more brown sugar to the sauce.

Dijon-Tarragon Cream Chicken

Reviewed: Jun. 20, 2011
Great recipe! I followed others' suggestions and coated the chicken in dijon mustard a few hours before cooking, and then dipped in flour immediately before putting in the pan. I also used half & half instead of cream as I didn't have cream on hand. It was still delicious! I served it with red potatoes (chopped into cubes, coated in salt, pepper, dijon mustard, and a little mayo and baked until done), and the sauce was great on the potatoes too! I will be making this again. Thanks!

Fantastic recipe. Simple and delicious! I used a combination of butter and oil and garlic powder instead of garlic salt. Delicious!

Quinoa Side Dish

Reviewed: Jun. 14, 2011
This was delicious! I've been disappointed with other quinoa recipes, and I thought this one would turn out similarly, but boy was I wrong. I didn't have vegetable broth so I used water instead, and it still turned out amazing. Ate this with "Zucchini with Pecans" from this site and it was fantastic. I will definitely be making this again!

My suggestions: decrease the sugar, increase the cheese. They were good, but I think these suggestions would make them great!

Fantastic! I left out the red pepper flakes because I don't like a lot of spice, but this was still great! Thanks!

Lemon Cream Cupcakes

Reviewed: Mar. 24, 2011
These were great! I think next time I would up the lemon zest in the cake part; it was good, but it could use a little extra wow factor. I played with the icing until it was a consistency I liked and garnished with candied lemon zest. Great recipe!

Shepherd's Pie VI

Very good! I added 1 more T ketchup and 2 T Worcestershire sauce, as well as 1/4 extra cup broth. I could have done without the extra broth, but everything else was great!
