Slow Cooker Mashed Potatoes

I already have a super mashed potato casserole that I use for Thanksgiving. This year I decided to use this recipe because oven space is always an issue. I will definitely use this recipe from now on. I did not use the garlic, did not need to use any of the potato water & did not feel that I needed to add the butter. I used the towel method that others suggested and even found them to be wonderful as leftovers!!!!

Mint Chocolate Chip Pie

Did not expect too much, but made it because I did not have time for a more involved dessert. I did make my own crust because I wanted to use my own pie plate and I did add thawed Cool Whip before freezing as suggested by another reviewer. It was amazingly good and my company just loved it and asked for the recipe. Will definitely make this again! I can see the possibilities for different ice cream flavors, but the mint is so refreshing. Can't wait to try it when Peppermint Stick Ice Cream is in our stores at holiday time.

We do not use the tomato paste because we did not want to open a can just for that small amount. However, it is still the best grilled shrimp ever!

Wonderful Banana Cake

Fabulous. There is a restaurant in our town that serves my husband's favorite banana cake. He says that this one is better. I used 3 bananas and baked it in a preheated oven. I frosted it with the banana pudding/1 C milk/cool whip as suggested by other reviewers. Topped it with chopped walnuts. I still can't believe that a cake mix was used to make this wonderful cake.

Pineapple Angel Food Cake I

I would never have made this without seeing the positive reviews. It is wonderful. I added 1/2 C coconut as suggested by other reviewers. I also served it with some thawed frozen raspberries. With the few ingredients, it is a great "to go" recipe.

Harvest Salad

Fabulous salad. The only change I made was to use olive oil instead of walnut oil, but I used much less. Add 1 T at a time. It is just too oily with 1/3 C of olive oil.

Cranberry Pistachio Biscotti

I made this because I was lucky enough to get some fresh pressed vanilla bean olive oil. It was fabulous!!!! Next time I am just going to make it with plain olive oil; I am sure it will be just as wonderful. I substituted cashew pieces for the pistachios because they were cheaper. Later note: this has become my favorite biscotti recipe. I now always make it with pistachios. The green of the nuts with the red of the cranberries make it perfect for Christmas. Everyone loves it. I dip the bottoms in melted white chocolate.

Banana Muffins II

These are great. Like other reviewers, I added 1 t vanilla & 1 t cinnamon. I sprinkled the tops with cinnamon/sugar mixture before baking. I have also made them with chopped nuts and/or chocolate chips.

Chicken Wild Rice Soup III

Hot Buttered Rum Mix

Unbelievable Rolls

Key Lime Cheesecake II

This is a super cheesecake if you love key lime pie. The prior review said it did not set up, but mine came out just perfect. I especially loved that it was not real sweet. I served it for Easter and everyone loved it.
