Meatloaf...a Little Southwest Style

Good meatloaf. Did add a few more bread crumbs so it would be firmer, and some cayanne and a ltittle taco seasoning to spice it up. Will definitely make again.

Scotch Eggs

Husband is from Scotland and says these are great! He took them to work with him for lunch to expose the guys to some "real food." LOL. I did stretch the recipe. Did 8 eggs with 1 lb sausage. 2nd time I managed 14 with 2 lbs. Used italian bread crumbs for a little more flavor. Fried for 3-4 minutes, then finished off in the oven for 20 minutes. Nice!

Chicken Tacos

Made this recipe pretty much to the letter. It was really good, kids loved it. I think next time I'll marinate the chicken longer in the lemonade and lime juice. Other than that, no changes necessary.

Stuffed Mexican Peppers

Doubled the recipe for a crowd, and they turned out great! I used 1 packet of regular taco seasoning (low-salt kind) and 1/2 packet of spicy taco seasoning. Gave it a little kick! 2 lbs ground chuck and 1 cup rice was plenty for 6 large bell peppers.

We loved these. Added a little less barbeque sauce and some chili powder and red pepper b/c we like spicy! Turned out great! They are not pretty, but tasted great and was something creative and different!

Slow Cooker Carnitas

The smell of this cooking overnight is reason enough to try it! It was fantastic in tacos for lunch and in sandwiches for dinner. I'll definitely be making this one again.

Teriyaki and Pineapple Chicken

This is a fantastic recipe!!! I used a big can of pineapple and added more chicken, which I marinated overnight in teriyaki sauce. I also used a low salt teriyaki, which worked nicely. I did reserve some of the pineapple juice so it wouldn't be so soupy as suggested by others. And I added a bit more red pepper because we like it spicy. So easy and tasty!

Chicago-Style Pan Pizza

Really great recipe! Going to try it with some other toppings next time, maybe black olives, green peppers, pepperoni. Definitely pre-cook the crust if using bread dough. Next time I'll make one by hand.

These came out great! Precooked without the sauce 30 minutes on both sides first. Dipped in sauce. Cooked 20 more minutes. Fantastic! One note...don't use barbeque sauce with honey already in it. Comes out too sweet.

Slow-Cooker Pepper Steak

Excellent recipe! I cut up the meat the night before and marinated it in lite soy sauce (less salty) and garlic powder. Also had some roasted garlic teriyaki sauce in the slow cooker, which added more flavor. As suggested, added peppers the last hour, but really should wait until the last 30 minutes since they were still mushy. Also added extra cornstarch at the end to thicken gravy, and served over rice. So tender and tasty! Definitely will make this one again.

Mom's Chicken Cacciatore

Really nice. I follow some of the other suggestions. I used olive oil, only a little flour, added some tomato paste (this made a huge difference), and used red wine. My husband kept going back for more sauce to dip bread in. Served over bow tie pasta with parmesan asparagus (recipe on the site). Very nice meal!
