Hamburger, Potato, and Kidney Bean Casserole

I just made this and it was FANTASTIC! But with my own twist. I made a few changes- I only used 1 lb ground turkey, 1 can of light red kidney beans, 1 can pinto beans, 1 can tomato paste, and 3/4 a can of enchilada sauce. Poured everything over the potatoes at the bottom and topped with bacon and cheese! This was so so good, the whole house loved it!

Baked Salmon Fillets Dijon

Very good, and I really dislike fish, so that is saying something! I added 1 tbs of jalepeno juice to the butter after it was melted. Also followed a suggestion and mixed my bread crumbs and butter/jalepeno mixture. Baked for set time, then broiled on high for two minutes. Turned out perfect, not too squishy but just juicy enough! It wasn't completely crispy like I had expected but the taste is what won me over.

Easy OREO Truffles

Fantastic! I used the minty flavored oreos and only one and a half packages of white baking chocolate. Oh so good, and extremely easy!

BBQ Pie

I had some trouble with this one. First off for me it was a major bean over load, the next time I make this I will have to alter the amounts somehow. The breading on the top did not bake all the way through the middle and was quite runny, I had to leave it in an extra 12 minutes. It was certainly not the most attractive looking dish I have ever made, but despite my difficult time prepping it tasted amazing! After making this a second time, it is definitely one of my favorites! Turned out perfect!

Alabama Fire Crackers

MMmmm! Very good! I used only one cup of olive oil and two packs of crackers and they were still dripping the next morning. Anyone have any tips on making them less oily? The flavor was fantastic and next time I make them I am going to use Italian salad dressing instead of ranch, just to see the difference!
