Red Velvet Cake IV
This cake is definate better if you practice it a couple of times. I followed previous advice and added the coco powder seperately from the food colouring and added icing sugar to the frosting (which is an acquired taste, I agree) My only other word of caution would be to make sure that the frosting has cooled down enough before you assemble the finished cake, otherwise you end up with an interestingly lopsided affair! Good conversation piece though.

Rhubarb Cake I
Very moist and tasty cake. As suggested I used less sugar and more rhubarb. I also substituted the zest of an orange for the vanilla and ginger instead of cinnamon, which worked really well. A definate keeper.

Chocolate Poke Cake
Living in England I had to convert this recipe to metric. I think this may have been the reason why I seemed to end up with tons of caramel sauce, (which was absolutley gorgeous). It seemed to settle in a large pool in the middle of the cake. That being said the cake did go down extremely well with my work collegue. I will make this recipe again, only this time with less sauce!
