Garlic Red Potatoes

This was fantastic..I agree with some other users suggestions, hopefully this will help others: 1. I made with lowfat butter to make it a healthy side dish 2. I cut the potatoes thinner and put them on a baking sheet. 3. I put the potatoes to a ziplock bag and spread the mixture throughout. 4. I baked this at 350 for 35 minutes, stirring once half way through (dont' forget the Pam on the bottom of the pan!) and they turned out PERFECTLY. 5. I added fresh cut onions to the mixture - I thought it added to the flavor. I definitely will add this to my recipe collection!

Chicken Breasts Pierre

This was ABSOLUTELY delicious! I made and took it to a dinner party and it was a hit. Reading others reviews, here is a synopsis of slight changes to the recipes that turned out great: -1/4 cup of red wine and 1/4 cup of water instead of 1/2 cup of water -double the entire sauce recipe to ensure plenty of this delicious sauce -adjust hot pepper sauce and chili powder according to your own spice threshold -I added diced onions with about 15 minutes to go -I browned the chicken and then cut into bite-size pieces for when I threw it in the sauce mixture -diced tomatoes instead of stewed -served over brown rice This recipes is very easy and super cheap if you already have all the spices!

Gazpacho II

This is so healthy as so delicious! It really wasn't hard to make either. YUM! A few tweaks after taste testing and reading other reviews: Spicy V8 instead of tomato juice, less salt, a lot less olive oil, a few cloves of garlic into the blender & include almonds in the toppings.

Lime Chicken Soft Tacos

Great recipe! I followed other user suggestions and added onions and green peppers, cilantro instead of oregano and used a whole lime. Delish! Served on corn tortillas with avocado, cheese, tomato and a greek yogurt sauce (yogurt, jalapeno, cream cheese and cilantro mixture)

Too Much Chocolate Cake

Absolutely amazing - I just used reduced fat sour cream and fat free jello to make me feel A LITTLE less guilty. Served with vanilla ice cream and it was to die for! I can't wait to start experimenting with the different chocolate chip and pudding flavors as someone else suggested. :)

This is a fantastic, healthy side dish. I added 3 cloves of garlic to the olive oil and used I can't believe it's not butter. I sprinkled a bit of parmesan on top and served it with garlic chicken. Yum!

Baked Dijon Salmon

This was tasty and incredibly easy to prepare! I only had sliced almonds so I used that instead of pecans and it was still good. I also only had dried parsley and that seemed fine. If you use aluminum foil to bake, it's an even easier cleanup!

Chocolate Chip Banana Bread II

This recipe is fabulous! Reading through the reviews, I took a little advice from others and added a splash of vanilla, cooked it in a bundt bad and sprinkled the bottom of the pan with cinnamon. Also, I used light butter and light mayo...is was still sinfully delishous!

Soooo good...to make it with a few less calories you can try it with wheat pasta, ground turkey and low fat cheese and sour cream. This is great for a large group of people - feeds about 10-12

Roasted Brussels Sprouts

I have a new love for brussel sprouts! I keep this recipe as-is, but just cut the brussel sprouts in half so there is even more of the browned goodness! I may also try garlic next time.

Balsamic Mushrooms

Love it! The garlic really makes this recipe stand out. I eyeballed it - but think I only used 2 tablespoons balsamic and threw in a bit of red wine that I had on hand instead of white. Wonderful healthy side!

Add sundried tomatoes + garlic. Use Sriracha instead of chile paste. Will try with veggies next time! My fiance told me this was the best pasta dish he's ever had :)

Banana Crumb Muffins

As others noted, used veggie oil instead of butter, and added cinnamon & vanilla to the batter. My fiance's reaction: "the best muffin I've ever eaten!" Would like to try replacing veggie oil with applesauce next time for a lighter version.
