I will never cook my roast another way again. My mother thought I was crazy cooking my roast this way but it turned out PERFECT! I added a pinch of salt, a sprinkle of pepper throughout, and just shook on my regular meat seasonings, garlic powder, onion powder, italiano and or steak spice, then patted some minced garlic over top and cooked it exactly as directed. Everyone LOVED it. It was a tiny crispy on the outside, a bit pink and wonderfully juicy on the inside but cooked just right! This is a keeper!
