Apple Crisp II

Very good apple crisp recipe! The topping is nice and crisp. I used 12 small/medium apples and used only 2/3 cup of the white sugar called for, and it tasted great! I've actually used the recipe for this topping to fix some of my other recipes that haven't turned out good. This is a go-to recipe for sure!

Blueberry Pie

I would add a bit more than 3 Tablespoons of cornstarch, but not 5 Tablespoons as some others said to do. It became too thick with 5 Tablespoons. I also added a few dashes of nutmeg and 1 1/2 Tablespoons of lemon juice. I did not add the butter (I forgot) but it still turned out fine. This is a good generic recipe. Be careful to pile the crust up very high or else it will bubble over!

Graham Cracker Crust

Tasted good, but it didn't stick together very well. It also called for too many graham cracker crumbs. I'm wondering if next time I should try brown sugar to help it stick together and pack better?

CARNATION® Famous Fudge

Really good! I only used 1 cup of sugar, and it was plenty. I also used fat-free evaporated milk to make it a bit lighter. For the marshmallows, I ended up using 1 cup regular marshmallows and 1 cup marshmallow creme, since that was all we had. Still turned out great!

Red Velvet Cupcakes

Very good! I used only about 1/3 cup cocoa, 2 1/4 cups flour, and buttermilk instead of milk. I also substituted about half of the sour cream with fat free plain yogurt, and used 4 teaspoons of vanilla extract I just frosted these with regular vanilla frosting from a can. Everyone loved these. I only wish they were more red.

Marshmallow Fondant

Quite simple and easy to work with. It didn't make too much of a mess, either. I used the marshmallow fluff like other people suggested and greased the mixing bowl and mixer before mixing. The only thing I wasn't thrilled about was the taste, it was kind of wierd tasting. I think I would add a bit of almond extract next time.
