Baked Teriyaki Chicken

Reviewed: Oct. 17, 2013
Very yummy. Made breasts and thighs. 30 minutes was a little too long for breasts that were pounded. I used maple syrup instead of sugar (about 3/4 amount called for). Doubled sauce which was unnecessary for 6 thighs and 2 large breasts.

Garlic Mashed Potatoes Secret Recipe

Reviewed: Jan. 1, 2008
Used 5 lbs of potatoes and it was way too much for my 7 person party. We ate the leftovers the next day and we still had more after 6 more people ate some! I added some milk to make them creamier. I roasted the garlic in the oven (YUMMY) and added some raw garlic the last 10 min. of boiling the potatoes. I personally didn't like the taste of the romano cheese but my guests said they did. I think it would be great w/o the cheese or w/ a different kind. Thanks!

Blue Cheese Beef Tenderloin

Reviewed: Jan. 1, 2008
Melt in your mouth delicious. We used a 6 lb. tenderloin and didn't have to double the blue cheese mixture but we doubled the marinade. Marinated it for 8 hours or so. I was definitely a keeper but it's really expensive! Thanks!!!

Maria's Stuffed Chicken Breasts

Reviewed: Jan. 1, 2008
Everyone loved it. It was SUPER easy and I changed it a little. I used a bag of fresh baby spinach (be very generous because it cooks down) and sauteed it w/ garlic. I had some mushrooms leftover already sauteed and added that to the mix. I pounded the chicken and just rolled the mixture into it and held it w/ toothpicks. Definitely will make w/ cottage cheese next time. I am using the leftover filling for shells tomorrow night. Thank you!

Zesty Slow Cooker Chicken Barbecue

Reviewed: Oct. 9, 2007
really good on hoagies w/ baked fries. cooked the chicken in broth first as suggested. I did find that the sauce burnt. anyone have a suggestion for that? use a slow cooker bag for easier clean up. Made again- LOVED it. Just threw in thawed breasts and followed recipe this time. very easy and tasty. burned the crock pot really badly though!

Shrimp Fried Rice II

Reviewed: Nov. 11, 2011
everyone loved it! I skipped the regular onion. used a whole bag of shrimp. added carrots, broccoli and frozen peas (boiled for a couple minutes and then stir fried). skipped bean sprouts but would love that addition. Also for sure do egg separate so you can see actual egg. easy and quick and yummy! 2nd time used asparagus, snow peas, peas, carrots, broccoli and eggs separate- so much more authentic. used tofu = next time marinate for 10 minutes in soy sauce, red pepper flakes and rice wine vinegar then add with shrimp.

Savory Chicken Breasts

Reviewed: Oct. 5, 2007
SO EASY. I should've read the reviews first though. I will definitely try crackers or stuffing on top next time. Maybe 1 1/2 slices of cheese next time. Added some garlic powder too. Way too many bread crumbs. But I will try again because the kids didn't make faces. Served with cauliflower and there was enough sauce to dip that in which was yummy. thanks.

Holiday Chicken Salad

Reviewed: Oct. 3, 2007
YUM. used only 1/2 C berries (used mixed), left out bell pepper, added grapes and apples. used low fat mayo. Everyone raved. It would be great served in a half of a cantelope for a luncheon w/ nice bread or croissant on the side. thanks so much. I bet a tsp. of curry would be good too. Next time I will use regular salt instead of seasoning salt.

Honey Baked Chicken II

Reviewed: Sep. 18, 2007
delicious. I used Dijon mustard, half the butter, a heaping tspn of curry. Next time I would like to try regular mustard. I would like less curry but my husband loved it the way it was. Used skinless thighs and legs. Just rinsed off for the baby and the kids and they loved it too. A new staple for us.TRY #2- made w/ regular mustard this time and we liked it even better!

Marinade for Chicken

Reviewed: Sep. 4, 2007
made enough for 8 chicken breasts at least. Use low sodium soy sauce next time. a nice change if you need something quick because you should have most of the ingredients on hand.

Broccoli Chicken Casserole I

Reviewed: May 9, 2007
5 stars for simplicity. I made this twice. Once w/ chicken breasts that I boiled, 1 1/2 cans soup, milk instead of mayo and 1 1/2 C stuffing- ALL MIXED TOGETHER and topped w/ bread crumbs. yummy. The next time I made it w/ 1/2 costco rotisserie chicken, 1 can soup, mayo and milk, 1 2/3 C stuffing and some garlic powder. all mixed together. both times were equally good. I don't think you can mess up this recipe. don't overcook broccoli. I used a head both times- no clue how much it weighed.

Chicken Enchiladas II

Reviewed: Mar. 21, 2007
GREAT! because it tasted good and was SO easy! I used leftover chicken (definitely shred it next time). Added 1/2 bag of taco seasoning to the mix (i'll try enchilada seasoning next time), poured taco sauce on top (I'll use enchilada sauce next time). I used lowfat sour cream. I was scared w/ soup as the main ingredient but it just made the recipe creamy. Can't wait to make again! also used the 6" size flour tortillas - perfect amount for our family. made 8. served w/ refried black beans- the kids devoured it!

Cali's Sinful Creme Brulee

Reviewed: Jan. 1, 2008
We skipped the chocolate part because we used a torch to brown the top and it wouldn't have heated the chocolate up to melt it. If we ever do it under the broiler I would do it. Very good and very easy. Make the night before and let sit in the fridge until you're ready to brown. Served w/ strawberries and blueberries in individual bowls. thanks!

Restaurant Style Chicken Nachos

Reviewed: Nov. 8, 2006
We thought this was a good dinner that the kids loved. I used a costco chicken (just the breast), I cooked the chips beforehand for about 5 minutes and I added canned black beans. Next time I will use some avacado too. I used at least 3/4 of the pack of chips (a very full 9X13 pan) which was too much for both our family and the mixture was less than I would've wanted so next time I'll only use 1/2 bag.
