Cheese Ravioli with Fresh Tomato and Artichoke Sauce

Reviewed: Sep. 15, 2005
I used canned tomatoes with some roma tomatoes from the garden. Next time I'll use the canned ITALIAN tomatoes to give it more flavor. I'll make it again.

Chicken Marsala

Reviewed: Aug. 16, 2005
Second time making this and tonight I made it for company- bad idea! Everyone agreed it was very bland, even thought I purchased a $10 bottle of Marsala. Good thing is that I tried a the Roquefort Pear Salad from this site and it was AWESOME!

Good Old Fashioned Pancakes

Reviewed: Aug. 14, 2005
easy and tasty. I made it with 1 tsp of vanilla and I think 1/2 tsp. would be better. Doesn't make very many though. Enough for 2 adults and my 2 toddlers.

Toll House Pie I

Reviewed: Jul. 18, 2005
If you like lots of nuts and soft cookies then you should enjoy this. I personally would prefer to make bar chocolate chip cookies and nuts in a 9X13 pan. It was just a little too gooey for me.

Artichoke Spinach Lasagna

Reviewed: Jun. 7, 2005
I did not cook the noodles and they were awesome. I used an 11X13 pan so I used one less layer but 5 1/2 noodles per layer. I used 12 oz. of fresh spinach. Too many onions if you ask me. I'll cut it to 1/2 next time (but I also used Ragu with onions and garlic so that may be the problem!). I skipped the rosemary- maybe next time I'll add some basil instead. I used non- marinated artichoke hearts. The feta was delicious on top- I only used 2 C of mozz. and it was plenty as we don't love cheese. I also increased the sauce to 1 1/2 jars. It was delicious the next day.

Pesto Pasta with Chicken

Reviewed: May 11, 2005
I followed the directions exactly and it was really bland. I wonder if it was the pesto I used. Can someone recommend a good pesto sauce (jarred or homemaed?). I can be contacted at hesantone@msn.com. Thanks! I would love to try this again.

Chicken and Mushroom Saute

Reviewed: May 5, 2005
This was just okay. There is a much better recipe for chicken with mushrooms on this site. It's a picatta recipe so it has lemon and that's what I think was missing from this. It's called Chicken Picatta II.

Cousin Cosmo's Greek Chicken

Reviewed: Mar. 22, 2005
We really enjoyed this. The sauce went really well with some french bread. Next time I'll add more tomatoes (I used canned) and more spinach leaves (I used 3 cups). Yummy! This is a follow up... this time I used 2 cans of diced, peeled tomatoes drained and at least 4 cups of spinach (about 8 oz). I also used the mediterranean feta cheese and it was great. I'm still having a hard time keeping the chix together and browning it so I think next time I'll cut the pieces in half and it will be easier to fold. third time= pounded chicken, put mediterranean feta in middle and rolled up with toothpicks. browned. then took out and added water, bouillon, large can diced tomatoes and flour to pan. brought to boil added chick and covered. toward end (after 15 minutes) added lots of spinach and covered. yummy. served over rice pilaf.

Chicken-Prosciutto Bundles

Reviewed: Mar. 22, 2005
I messed up and used BAY leaves- don't do that! I also realized I don't like prosciutto and it's VERY expensive. It was okay though.

Jamie's Minestrone

Reviewed: Mar. 22, 2005
The kids loved it. I added extra spinach and carrots and skipped the red wine. Too much zucchini for us and we deleted the pasta. Next time I might use the correct chix broth/water because I took other's suggestions and it was very saucy.

Toasted Garlic Bread

Reviewed: Jan. 19, 2005
I used pita bread ( I opened it up and put the spread on the inside and layed it out on a baking sheet) and didn't have the cheese. It was perfect! For something thin like pita bread 5 minutes is way too long- try more like 2-3 minutes and it will be nice and crispy.

Best Carrot Cake Ever

Reviewed: Dec. 5, 2004
Really great cake. I sprinkled cinnamon on top for decoration. It was time consuming because I didn't have a grater but worth it. I got the cream cheese frosting from this site and it was good as well.

Ziti with Italian Sausage

Reviewed: Sep. 29, 2004
I thought this was great! I didn't think the meat would be enough but it was perfect. I added 1 1/2 cans of tom. sauce and we liked it that way. The only thing is that it was way too salty and I used less than suggested. Next time I'll just use 1/2 tsp. I made this for company today and made 20 servings in 2 foil pans. First of all for 15 adults and 6 kids I had one entire foil pan left over. Plus there was absolutely no sauce in the pan. I have no idea why ( I had an entire large pot full of sauce that I added). My mom suggested using tom. pasted to kind of make the sauce thicker. I was bummed about that part but surprisingly it still had a great flavor. Used 4-8 oz. packs of mushrooms. just add them to the meat mixture (probably 3 would be plenty).

Romantic Chicken with Artichokes and Mushrooms

Reviewed: Sep. 15, 2004
I added lemon juice and garlic powder. I also dredged the chicken in flour before I put it in the pan. Make sure you use MARINATED artichoke hearts- that makes a big difference. I thickened the sauce up with a bit of flour too.

Buffalo Style Chicken Pizza

Reviewed: Jun. 8, 2004
I made a low fat version with boboli thin crust pizza. I used lite bleu cheese and not very much butter or cheese. It was okay but way too much chix and way too much bleu cheese. cut in half at least. I will use a hotter hot sauce next time- maybe a buffalo wing sauce like others suggested.

Chewy Chocolate Chip Oatmeal Cookies

Reviewed: Apr. 15, 2004
Next time I will use less oatmeal (maybe 2C), more chocolate chips (1 1/2 C) and cook them 5 minutes longer. Thank I think they'll be 5 stars!
